Here’s my recipe on the @nextlevelbrewerco - designed to be extremely consistent, clean, with great intensity and clarity.
Extremely coarse grind with shorter ratios, removing the first part of the extraction to intentionally serve only the best of what the coffee has to offer.

runner-up at World Brewers Cup 2026. eight points behind the winner. and the recipe behind it is doing something more deliberate than it looks.

@simon_gautherin , Australia — finished second at WBrC 2026, and also happens to be the co-founder of @apaxlab . water is his specialty. this recipe shows it.

his blend: 7g Penas Blancas Natural Gesha (Colombia) + 7g Finca Nuguo Natural Gesha (Panama). his water: 80ppm. his dripper: Pulsar Nextlevel, valve-controlled.

I swapped the beans — Mount Totumas Natural in for Penas Blancas (strong white floral, peach, elegant acidity, high clarity), Panama Black Moon Gesha in for Finca Nuguo (similar body, slightly lighter). same water ppm, different mineral composition underneath.

the technique itself is the real story: 100ml immersion for 80 seconds to build body and sweetness, then open the valve and discard the first 10ml — the most concentrated, sediment-heavy extraction sitting at the exit point. close it again, pour a fresh 100ml, and open the valve immediately after — a fast percolation pass that pulls clean top notes without over-extracting.

two extraction phases, two different jobs. body built in one stage, clarity preserved in the other. that’s the logic. not just a pour-over — a controlled separation of what gets extracted, and when.

The NextLevel Pulsar Coffee Brewer makes a perfect cup of coffee! And you can customize the entire brew!

If you mixed a French Press coffee maker, a V60 pour-over dripper, and an AeroPress, you’d get this extraordinary coffee brewer! It seems to inherit qualities from all of them.

At the end of the day, it’s all about an uncomplicated great cup of coffee, with very little effort.

For this coffee, I used 18 grams of freshly ground coffee and 340ml of hot water. I ground the beans just about as coarse as grinds you’d use for drip coffee. I do recommend using freshly roasted and freshly ground coffee. It’ll make your cup of java so much better!

In a nutshell, I first poured a little hot water over the top screen and the small round paper filter below it. This step wets the filter and warms the server. I discarded the water and proceeded to brewing the coffee.

I poured water over the top screen; it got evenly diffused over the grinds because of all the little holes. I let the wet grinds sit for about 30 seconds and then opened the little tap that releases coffee into the glass server (carafe). I poured the rest of the water over the top screen in three batches. Once the water had flowed through the grinds, I closed the small tap and removed the brewer. I gave the server a little swirl and served myself a delicious cup of coffee! The entire brew took about 3 minutes.

Here’s the magic of this brewer… this is just my process and a starting point! You can mess with all the steps to come up with your own perfect cup! Let the water sit in the grinds longer, pour the water faster or slower, leave the tap closed with all the water in the brewer, let the water flow into the server slowly as you pour, change the amount of grinds or water, grind coarser or finer… sky’s the limit! Once you’re happy with the cup of coffee, just repeat!

Today’s objective: Clarity

Rewrite the Pulsar mini profile, link the Bluetooth scale, and the accuracy of the water volume margin to +-3%.

The grinder uses the flavor pointer - ZP6
Grand CRU Gesha Village Oma

1. Prewet 50g close valve
2. Blooming 30sec then open valve
3. Wet1 92 degrees to 100g, keep water level 1cm above bed
4. Wet2 90 degrees to 150g
5. Wet3 88 degrees to 200g
6. Wet4 86 degrees to 250g

Very concrete flavor, lovely!!

This coffee tasted more like raspberry juice than coffee... 
🍓 Raspberry in Loop

Some coffees make you chase tasting notes.
This one keeps bringing you back for another sip.

Today I brewed Raspberry in Loop on the Next Level Brewer Pulsar.

Recipe
▫️ 20g Coffee
▫️ 250ml Water @ 89°C
▫️ 90g Ice
▫️ Total Brew Time: 3:35

The cup opens with vibrant raspberry-like fruitiness, followed by a delicate sweetness and a clean, refreshing finish. The ice helps lock in the brightness while keeping the body silky and crisp.

A reminder that great coffee doesn't always need complexity—sometimes it just needs the right recipe.

☕️ VARIETY OR PROCESS: WHAT ARE YOU REALLY TASTING?

When a coffee becomes spectacular, we often praise the process.

Anaerobic fermentation.
Thermal Shock.
Advanced fermentations.

But are we still tasting the variety?

To explore this question, I extracted the same Bourbon Sidra from @fincadiviso  roaster by @mokana.cafe using three very different brewing approaches:

🌸 Conical + LilyDrip COS @normcorewares  @lilydrip 
→ Looking for the variety.

⚖️ Pulsar @nextlevelbrewerco 
→ Looking for balance.

🍯 Tricolate @floe.coffee 
→ Pushing the limits.

The result was fascinating.

Despite 72 hours of fermentation:

🌸 the floral character remained present

🍎 the fruit notes stayed clearly defined

✨ the identity of the Sidra remained intact

The process changed the way the coffee expressed itself.

But it never completely erased the variety.

That is often the hallmark of a truly exceptional coffee.

Because great processing should amplify a variety…

Not replace it.
