Bog butter update 🗣️

A month and a half ago i buried a few pounds of butter in a local bog - mimicking how folks would’ve used its consistent temperature, low pH, and undisturbed nature as a preservation advantage pre refrigeration.

Great chickens - roasted over beech - with a big pot of fresh chanterelles underneath to catch their dripping fat. Finished with a poke or two at the end to release some of the accumulated juices. Fantastic. taken in Charlottetown, Prince Edward Island by @nickofnorth

Tumble roasting poblanos (rhythmically, even - squeek squeek) to char and remove their skin for preservation purposes. A traditional technique through much of the south - and a new tradition up here on the island. taken in Charlottetown, Prince Edward Island by @nickofnorth

To me there’s really only one or two ways to cook a maitake mushroom. This one - confit until insanely tender (and then finished over charcoal) - is by far my favourite.

Fresh nasturtiums blended through fermented tomato water and then mounted w butter. V simple sauce for some grilled mackerel.

Also easy to balance for a beverage - seasoned with a bit of strawberry juice to round it out, and then ice clarified. Take it. Have it. It’s yours now. taken in Charlottetown, Prince Edward Island by @nickofnorth

Wapato (my favourite tuber) - is pretty much ready to harvest.

Will wait for the ground to soften a touch more - to make it easier to harvest in quantity - but it’s a very, very delicious time of year.

To answer the question i know that you’re thinking - it’s like a potato crossed with a grapefruit. Fantastic. taken in Charlottetown, Prince Edward Island by @nickofnorth

Autumn olive is by far the most productive berry on my foraging list. Also probably the most delicious. And under used. And easiest to harvest. And did i mention the most delicious? taken in Charlottetown, Prince Edward Island by @nickofnorth
