Sharing a bit of my food culture growing up in Tobago🇹🇹 with this wknd’s special. Accra it’s traditionally made with saltfish(salted cod), deep fried seasoned and spiced. I’m using scraps from our redfish after I portion for our 3hr cured red fish. I’m also scraping any scraps off the bones with a spoon!

What inside the Accra/Red fish fritters…..(Red fish, green and red bell peppers, shallots, garlic, cilantro, coriander, cumin, flour milk).

My heart is full.❤️ Over that last 3 days I got the opportunity to cook heart to heart and talk about our food culture and what drives us as Chefs, with my fellow @beardfoundation legacy network advisor @chefrosanarivera and @chefricardocastro. The JBF Legacy Network presented by Heinz is a mentorship program that trains emerging leaders across the culinary industry and connects them with future generations of excellence. In our latest blog post, four program participants reflect on the impact of the meaningful connections, guidance, and support they have gained over the past seven months as part of this unique community. In support of the current cohort, program sponsor and Sonoma-based winery @thecallingwine designed new educational modules and provided a selected advisee with a fellowship comprising mentorship and in-person experiences.
