We are kicking off the rollout of 2025 Shincha with some teas and terms to expect to see this year!

One of our primary focuses is and will always be education.

Japanese green tea is an incredibly expansive world with many different styles, traditions, and brewing techniques. We're always learning more, and we strongly believe that knowledge and culture must be shared, not paywalled.

So, here are a few of the most popular Japanese green teas and a few Kyushu specialties we love!

Stay tuned for more content, and of course all things Shincha. If you want to see us go over any of these in specific — let us know!!

Much love,

Jeff & Harrison

WE 🌿 H8 🌿 GATEKEEPING

Additional tips:

Make sure you're using clean, filtered water - ideally around 80-100 TDS if you're a water dork (umm, you kinda should be).

Make sure your kettle is clean! You can use a citric acid solution to descale - it's cheap, natural, and won't leave your kettle smelling like vinegar.

Preheat your brewing vessel! This will help maintain the optimal temperatures for brewing your tea hot.

If you want to take your mizudashi to another level, split your water base to be 600g of cold water and 400g of ice, made from the same water. Follow the instructions as written otherwise.

Yeah I procrastinated taking these to get developed but it's for a good reason and it's better than all of your reasons by @nokaimports

While we were in Yame today, we visited Baba-san - one of two remaining producers of traditional Japanese cedarwood incense.

They get cedar that's trimmed and discarded from the lumber and specialty furniture industry. The cedar is dried in a fire room, and pounded into powder with 60kg metal rods before being hydrated with river water, extruded, and hand cut. The water wheel that powers the entire process is made from the same cedar. The Baba family lives in this building that's been around for 100 years. This is their home, but so much more.

After visiting them, we snaked through narrow mountain roads to get lunch. The dashi in the udon set we ate was flavored with fish smoked with cedar from the forest that we spent the afternoon with. I have never felt anything like this. by @nokaimports

The less official #BTS (unaffiliated) content we know you crave by @nokaimports

We’ve been riding the tea high from @worldteaexpo for the past couple weeks, and now that things have settled (and our feet have recovered), we just want to say a huge thank you—not only to our amazing partners @ikkyu_tea , but to all the incredible Vendors and Guests we had the pleasure of meeting during the expo.

We learned a ton, tasted even more, and had the joy of sharing the floor with incredibly kind and passionate people. It was of highest honor to be there supporting Ikkyu and to make our debut from the Las Vegas soil as Nōka Imports.

The expo might be over, but we’re just getting started and are beyond excited to share more Kyushu tea with all of you. Whether you’ve got questions, ideas, or just want to say hey— we love chatting! (even when we aren’t 7 steeps in)

In the meantime, here’s a little photo dump from the trip. Thank you again to everyone who stopped by—we’re already looking forward to the next one.
