A big part of how you feel the next day comes down to how the distillation is cut.

Think about distillation like filtering out the parts you don’t want. During fermentation, compounds like aldehydes are naturally created as yeast converts sugars into alcohol. Aldehydes can contribute to harsher aromas, a sharper burn, and that heavier feeling the next morning.

That’s why distillation cuts matter so much. The beginning and end of the distillation, known as the “heads” and “tails,” contain higher concentrations of these unwanted compounds.

Making narrow cuts, like we do at Nosotros, means keeping only the cleanest, smoothest part, the “heart” of the distillate.
