Red wine doesn’t survive a braise. Chef Yu @chef_yu_tw knew that. He’d trained in French kitchens and understood exactly why adding it to a Taiwanese beef noodle broth was, technically, a waste. @wine_the_noodles
He did it anyway. Nine years of testing, different grapes, different ratios, bottle after bottle until he found one that held.
Before all this, he was a Sales Manager in Taipei. Then a beef noodle obsessive who ate his way through every famous shop in Taiwan. Then three restaurants, a Lonely Planet feature, and his partner Pei in London who saw a gap in the city’s Taiwanese food scene before he did.
Now he’s in Paddington. And what keeps him going? Customers telling him they’ve finally found a taste of home.

Muri @muri.music is a Filipino violinist and singer-songwriter who built her solo career the hard way — city by city, starting from scratch. Her debut EP 11ème captures the Paris years. In 2025 and 2026, she played SXSW and Focus Wales as the sole Filipino act.
We sat down with her as she opened for @moonlanegardens at @dingwallscamden A huge thank you to @moonlanegardens for kindly having us at their London show.

She does one dish. One.
Masami runs Sosaku Onigiri @sosakuonigiri at Shepherd’s Bush Market, and she’s been making onigiri long before the stall existed, for cherry blossom picnics, for family, for the joy of getting a rice triangle exactly right.

Zhi We founded Physiolosophy @physiolosophyuk with Pilates on Charing Cross Road after leaving the NHS, burned out, diagnosed with Grave’s Disease, and certain she needed to do things differently. Her practice runs on one idea: pain is never purely physical.
We visited her at A Morning of Movement, a wellness event she’s been co-hosting with @kindeum for three years — dumplings, movement, self-massage, and a conversation ESEA communities don’t have nearly enough.
