Hey Nü Bilu fam, happy Friday! If the creamy shiro pasta caught your eye, here’s the recipe. Save it for the next time you’re craving something different!😋

Ingredients
8 oz pasta
¼ cup shiro powder
½ small red onion, finely chopped
1 medium tomato, chopped
2 garlic cloves, minced
2 tbsp niter kibbeh
1 cup vegetable broth or water
½ cup heavy cream
¼ tsp black pepper
¼ cup freshly grated Parmesan cheese, plus more to taste
Reserved pasta water as needed

Method
1)Cook pasta in salted water. Reserve some pasta water, then drain.

2)Heat niter kibbeh in a pan over medium-low heat. Add onion and cook until softened. Add tomatoes and cook until broken down, then stir in garlic.

3)Whisk shiro powder with broth or water until smooth. Add to the pan and simmer for 10-15 minutes, stirring frequently.

4)Stir in heavy cream and black pepper.
Simmer gently for 2–3 minutes, adding pasta water as needed.

5)Toss in the pasta, then remove from the heat and stir in Parmesan until melted and creamy. Adjust salt to taste and serve.

Enjoy!😊

Hey Nü Bilu fam! Hope you all had a great weekend!

Back with part two of the French toast, featuring korarima (Ethiopian cardamom) — a spice I grew up with and one that adds such a unique flavor to this dish. If you haven’t tried korarima before, this is your sign!
