A little reminder that so much of what my mom taught me stayed with me 🥹🤎

Frijoles charros 🫘

Ingredients:
• 1 lb dry pinto beans
• ½ lb bacon, chopped
• 3 weenies or smoked sausages, sliced
• Onion, chopped
• Garlic cloves
• 1 jalapeño, chopped
• 2 Roma tomatoes, chopped
• Cilantro
• Oil, as needed
• Salt
• Knorr chicken and tomato bouillon
• Cumin
• Garlic powder

How to make them:

1. Sort and rinse the beans, then cook in water with garlic, onion, and salt until tender. Keep the beans in their broth!
2. Cook the chopped bacon until it starts getting crispy, then cook the sliced weenies or smoked sausages. Set aside.
3. In a little oil, cook the chopped onion, jalapeño, and tomatoes until soft and the tomatoes are mushy.
4. Add the bacon and weenies to the tomato mixture. Season to taste with Knorr chicken and tomato bouillon, cumin, and garlic powder.
5. Add this whole mixture to the pot of beans and broth, stir, and bring to a boil.
6. Add fresh cilantro, reduce the heat, and simmer for a couple of minutes. Taste and adjust the seasoning.
