Low-effort summer hosting is honestly my favourite kind of hosting, and this entire three-course menu looks significantly more impressive than the amount of effort involved! #HomeOfFoodLovers 

Dessert served in the @johnlewis Modern Rustic Small Stoneware Plates - 68243603 

🍅 roasted tomato & burrata:
Cherry tomatoes + garlic + olive oil + salt into the oven at 200°C for around 25 mins, mush them together and finish with basil, burrata, & black pepper.

🍓 strawberry compote:
800g strawberries + 2 tbsp sugar into a pan for 10 mins until jammy and soft!

The final recipe from last week’s dinner ✨

If you’re after a dessert that feels a little bit fancy but takes almost no effort, this one’s for you. It’s rich, silky, make-ahead friendly, and nobody ever guesses it’s made with tofu.

✨ 2 Ingredient Chocolate Mousse ✨

Ingredients
* 300g silken tofu
* 200g 70% dark chocolate, melted

To serve: 
* Fresh strawberries

Method
1. Melt the chocolate and leave it to cool for a few minutes.
2. Add the silken tofu and melted chocolate to a blender and blend until completely smooth.
3. Taste and, if you’d like it a little sweeter, add the maple syrup. A small pinch of flaky sea salt also works beautifully to balance the richness.
4. Divide between serving glasses, top with sliced fresh strawberries, and refrigerate for at least 2 hours or until nicely set.
5. Serve straight from the fridge.

One of the stars of last week’s dinner 🍅

This tomato galette is exactly the kind of recipe I want in my hosting rotation: suuuuper low effort but SO MUCH FLAVOR!

Ingredients
* 1 sheet all-butter puff pastry
* 1 tub Boursin Garlic & Herbs
* 3–4 ripe tomatoes (I used a mix of heirloom & vine tomatoes)
* Olive oil
* Flaky sea salt
* Black pepper
* Fresh basil
* 1 egg (for the pastry wash)
* Everything but the bagel seasoning (optional)

Optional (but highly recommended!) topping
* Any leftover tomatoes cut into chunks
* 1 garlic clove, finely grated
* A handful of fresh basil
* Olive oil
* A splash of balsamic vinegar
* Flaky sea salt

Method

1. Preheat the oven to 220°C (200°C fan).
2. Lightly grease an oven-safe round dish or tray and lay the puff pastry inside, leaving enough pastry around the edges to fold over later.
3. Spread a generous layer of Boursin over the centre. 
4. Layer over your sliced tomatoes, drizzle with olive oil and season generously with flaky salt and black pepper.
5. Brush the pastry border with egg wash, optionally top it with everything but the bagel seasoning (or even parm works!)
6. Bake for 20–25 minutes, or until the pastry is deeply golden and crisp underneath.
7. While the galette bakes, toss any leftover tomatoes with the garlic, basil, olive oil, balsamic and a pinch of flaky salt and chill in fridge
8. Once the galette has cooled for a couple of minutes, spoon the dressed tomatoes over the top and finish with fresh basil.

Spicy Mango & Halloumi Panzanella 🥭

Serves: 3–4

You’ll need:
* 2 ripe mangoes, diced
* 3 mini cucumbers, sliced
* 1 avocado, diced
* 1 block halloumi, cut into small cubes and pan-fried until golden
* 4-5 slices sourdough, cut into cubes
* Olive oil
* 1 garlic clove, grated
* Salt

Spicy Maple & Dill Dressing:
* 1.5 tbsp olive oil 
* 2 tbsp maple syrup
* Juice of 2 limes
* 1 tbsp fresh dill, finely chopped
* 2 tsp chilli flakes (adjust depending on how spicy you like it)
* 1 tsp salt
* 1 tsp freshly cracked black pepper

Method:

1. Toss the sourdough with olive oil, garlic and a pinch of salt. Bake at 200°C (180°C fan) for 8–10 minutes, until golden and crispy.
2. Whisk together all the dressing ingredients. If you have time, let it sit for 30 minutes (or a few hours) so the chilli flakes infuse into the dressing.
3. Add the mango, cucumber, avocado, halloumi and toasted sourdough to a large bowl.
4. Pour over the dressing, toss gently and serve straight away.
