Okume was established in 1871 in Nihonbashi, Tokyo, home to Japan's first fish market. Even before Tsukiji!

For over 150 years, we have meticulously selected the finest products while advising professional chefs daily. Sometimes, we even collaborate with customers from restaurants, sushi bars, and noodle shops to create the perfect dashi.

These 150 years of dedicated and earnest work with dried foods are Okume's greatest pride.

We are excited to announce our limited-edition Dashi Canister in new, special colors, the latest edition of a long-term favorite product.
Each canister comes with an inner lid and can be used for storing dashi, helping protect it from moisture and preserve freshness.

The colors are inspired by the essential elements of Japanese dashi:
Konbu Green, influenced by the natural color of konbu itself
Katsuo Red, a deep red representing bonito, an essential ingredient at the heart of dashi making

Each canister includes a separate assorted set of five dashi varieties — Premium, Classic, Kyoto, Tokyo, and Vegetable. Three packs of each variety are included (15 packs total).
Dashi varieties are pre-selected and cannot be customized.

These canisters are made by Kato Seisakusho, a long-established Japanese tea canister maker founded in 1895. For over a century, they have specialized in crafting canisters designed to protect delicate ingredients from moisture, using techniques passed down through generations.

We’re thrilled to introduce this season’s Dashi Omakase Series: Oden Edition, inspired by the quintessential Japanese winter tradition—and a menu expressing our passion for dashi and the exceptional seafood we source directly from Toyosu, our home market in Tokyo.

While rooted in classic Japanese cuisine—and oden in particular—this menu is infused with curiosity, playfulness, and a sense of discovery: a joyful journey of umami and subtle surprises.

The first course awakens your appetite with an explosion of natural umami.
The second highlights premium Toyosu seafood.
The third and fourth showcase timeless oden classics.
And the fifth through seventh express our belief that dashi can—and should—be far more free and creative than people expect.

Offered at Dashi Okume every Friday and Sunday at 8 p.m. throughout the winter.
$95 per person.
Reserve via Resy.

We hope this tasting menu brings warmth, delight, and a sense of excitement to your evening. taken in DASHI OKUME Brooklyn by @okume.us

Dashi Okume × Kenzo Estate Winery
A Special Wine Pairing Experience

Where dashi meets Napa.
At Kenzo Estate Winery, nestled 1,550 feet above the mountains of Napa Valley, wines of remarkable depth are crafted — where umami, acidity, and minerality coexist in perfect harmony.

Kenzo’s red wines reveal layers of black cherry, cassis, herbs, spice, and minerality, while the white expresses lemon, gooseberry, and subtle earthiness — each leaving an elegant, lingering finish that pairs beautifully with soy sauce and dashi.

We were deeply inspired by founder Kenzo Tsujimoto’s vision — to create wines of the highest caliber that embody Japanese refinement and artistry, harmonizing gracefully with the elegance of Japanese cuisine.
That shared philosophy led to this special collaboration: where dashi meets Napa.

Kenzo Estate’s ai Cabernet Sauvignon 2018 — a 100-point masterpiece, also receiving 92+ points from Robert Parker’s Wine Advocate and 94–95 points from James Suckling — stands as a symbol of true craftsmanship and global recognition.

For this occasion, we present a Dashi Omakase × Kenzo Estate Wine Pairing ($195), featuring six wines (3oz × 2, 2oz × 2, 1oz × 2) — a journey through the harmony of Japanese umami and California terroir.

Two nights only — November 13 (Thu) & 20 (Thu) at 8:00 PM
Limited to 21 seats per night.
