Making a rare grid post to share that my last day at Clavel is this Friday, May 1st. The past four years have shown me so many opportunities to create and connect, and to explore so much of the world of mezcal, fermentation and flavor that I couldn’t have imagined even in my wildest dreams. I’ve had the honor of teaching workshops, traveling to Oaxaca three times, and most recently Nuevo León, to learn about and experience mezcal directly from the source, and have done pop-ups with incredible creative minds across cities, states and even countries. This past year, I’ve also had the honor being the director of the bar program, and getting into the nitty gritty of administrative work and managing a team, along with stewarding the bar lab I’ve curated over the prior three years. This journey has been incredible to say the least, and many of the lessons I’ve learned and experiences I’ve had I will carry with me throughout my life. All things come to an end, so come celebrate the end of this journey with me this Thursday and Friday. I’ll be ringing out my time the way I came in, shaking tins and gushing about my favorite stories behind each bottle of mezcal. Con amor, un mil gracias. Nada de esto podría ser posible sin su apoyo ❤️ by @olive__todd

Stepping into the new year with expanded leadership behind the bar. Working alongside Mezcal Director Dre Levon, we’re proud to officially welcome Olive Todd as Bar Director & Head of the Bar Lab. For years, Olive has overseen all fermentation at Clavel and stewarded our house elixirs, salts, syrups, shrubs, and more behind the scenes -supporting and shaping the bar program as a whole. Gracias Olive, Dre and to our entire bar team. by @olive__todd

What an incredible honor. To be considered as one of the most outstanding bars in America is humbling to say the least. Thank you to the spirits; the spirit of our team, the spirit of the farmers, and the spirit of mezcal. Thank you to all those who have shown us their way, taught us indispensable knowledge and all those who share the joy of what we have to offer. It is such a privilege to be able to have demonstrated the beauty of it all with such an esteemed audience. Together, we are incredible. I am so excited to see where this journey continues to lead us 💐 by @olive__todd
