Today is Bella's death day. 🌈❤️ It's the third anniversary since losing her and everything in my life has changed. I miss her just as much, but it hurts different now.

Adrian and I are no longer together. But I'm hopeful new and better paths will find us both, and we can prosper separately. 🫂 I'm living with my mom again, and it's nice to be home. 💪 I'm going to the gym consistently and trying to save money for a camper van. 🤞

I don't think I'll ever be ready for another dog or pet. But I donate to Action Programs for Animals monthly...so far that's all I'm ready for. Maybe eventually I'll volunteer too. But I want to reduce any chance for stress right now.

🐾 Bells, I love you. I miss your eternal puppy smell. I miss your eyes ever watching me, and your tiny paws tapping on the floor. I even miss your bites and am sad the scars are gone from them. I miss your little noises and begs for food. I spoiled you, and wish I could have even more. I see you in every dog. I love you.

Sprouts ain't got nothing on my homemade Sweet Chili Tofu Bowl, and it was cheaper too! 😋🍱🥢

Ingredients:

KOREAN SAUCE

- 1 tsp freshly minced garlic
- 2 oz soy sauce
- 2 tbsp brown sugar
- 1 tsp honey (optional)
- 1 tbsp sesame oil
- 1 tb Chili Garlic Sauce
- 1 tsp Onion Powder
- 1 tsp Rice Vinegar
- Splash Lime Juice
- 1 tbsp cornflour (cornstarch)
- 2 oz water

VEGGIES

- 2 cucumbers, roughly chopped
- Kimchi, to taste
- 1 cup Baby bella Mushrooms

CRISPY TOFU

- 1 container firm tofu, drained
- 1 tbsp cornflour (cornstarch), to coat
- 4 tbsp olive oil

RICE

- Steamed rice (follow instructions on rice pack to cook)
- Seasoned with Salt & Pepper
- 1 tsp sesame seeds
- 1 green onion (scallion), finely sliced

Directions:

1. Cut cucumbers in quarters, set aside. Slice mushrooms, sautee in a pan with oil, and a dash of umame (or soy sauce) for 6-8 minutes until soft.
2. Cut the tofu into small squares. Dust each piece in the cornflour.
3. Heat the olive oil in a large, heavy-based frying pan over medium–high heat, then cook the tofu for 6–8 minutes (approximately 1–2 minutes per side) until golden brown. Set aside on a plate.
4. Reduce the heat to low. Add the garlic, soy sauce, brown sugar, chili garlic sauce, rice vinegar, sesame oil and lime juice. Cook, stirring, for 1 minute or until the sauce has thickened slightly.
5. Combine the cornflour and water in a small bowl. Add the mixture to the pan, 1 tablespoon at a time, to thicken the sauce to your desired consistency.
6. Return the tofu to the pan. Toss to coat in the sauce. If the sauce is too thick, add 1 tablespoon of water at a time to loosen the sauce to your desired consistency.
7. Divide the rice, veggies and kimchi among four bowls. Top with the tofu and sprinkle with sesame seeds and spring onion.
