The menu no chef wrote. The cuisine no cookbook carries. The dinner the monsoon cooks. 🌿

For centuries, Adivasi communities across the Western Ghats ..... Kokni, Warli, Katkari, Mahadeo Koli, Bhil ..... have cooked with 200+ wild vegetables most of us have never heard of.

Roots. Tubers. Berries. Mushrooms. Leafy greens. All foraged from monsoon forests. Zero farming. Zero supply chain.

Last year, 600+ people gathered to taste what the forest grows. This year, it happens again ..... bigger, wilder, and with stories that gave a 92-year-old Tarpa maestro a Padma Shri.

A Living Biodiversity Movement

For nearly 10,000 years, Wheat fed civilizations across climates, cultures and communities.

Not through one uniform seed

But through thousands of diverse native varieties adapted to different soils, rainfall patterns, temperatures and ecosystems.

Today, much of that biodiversity has disappeared.

Modern industrial agriculture replaced diversity with uniformity.

Yield became the priority.
Resilience was forgotten.

At OOO Farms, tribal farming communities are working to conserve what still survives.

557 native wheat varieties.
Protected through living cultivation.
Not stored as museum objects.
But grown season after season in real farms.

Some withstand drought.
Some survive floods.
Some resist pests.
Some adapt to poor soils.
Some carry deeply diverse nutritional structures shaped over centuries.

Each seed carries ecological memory.

Our conservation work includes:
• community-led seed preservation
• revival of native wheat at cultivation scale
• documentation of 60+ morphological characteristics
• maintaining genetic purity through field observation
• open-source community seed access

Because once a seed disappears,
an entire genetic history disappears with it.

The future of food security cannot depend on genetic uniformity alone.

Biodiversity is resilience.
Biodiversity is adaptation.
Biodiversity is food security.

And maybe the question is not:
“What is wrong with wheat?”

Maybe the question is:
“What happened to wheat diversity?”

Every meal can protect biodiversity.

Wheat Diversity

A 5000-year-old wheat variety was excavated from the Harappa Indus Valley Civilization.

And this story didn’t end underground.

Across India, a few ancient native wheat varieties quietly survived — preserved by generations of farmers who kept saving seeds while the world moved toward industrial monocultures.

Paigambari.
Khapli.
Kali Baal.
Bansi.

These are not just grains.

They are living agricultural history.

Long before modern hybrid wheat replaced biodiversity with uniformity, India cultivated thousands of native grain varieties adapted to different soils, climates, and cultures.

Many disappeared.

Some survived.

Today, OOO Farms is conserving 557 native wheat varieties — keeping alive a legacy carried through centuries of cultivation.

Because extinction begins when cultivation ends.

For most of us, the everyday grain rotation is pretty small: rice, wheat, maybe a millet or two.

India’s agricultural diversity includes 20,000+ native varieties, many of which rarely make it into our kitchens.

Wild Food Festival Documentary - Broken Season

The climate is broken. The forest noticed first. 🌧️🌵

The rains no longer come when they used to. Sowing has shifted. Harvests have shifted. And in a single stretch of seasons, the communities of the forested mountains have lived through two famines back to back .... a wet famine and a dry famine.

But the people of the forest have something the rest of us have forgotten: knowledge older than farming itself.

Forest has come to the city! Made my way to Kurla this morning to catch behind the scene preps for Wild Food Festival by @ooofarms & @thelocavore.in This is eight year of them sharing what grows around wild in western ghats. 
Some hundreds of foraged wild foods are on display, you will also get to taste many of them cooked by tribal communities +  young chef students are putting together a hi tea. When I first time attended the festival, my mind was blown (also overwhelmed) with the sheer variety of foods I hadn’t known anything abt. Take your time to soak it all. They have wild wiki page on their website listing all the wild foods and their health benefits, culinary usage etc

Obsessed with the white miso, but the ambadi kimchi, marinated tetu and vaaste (bamboo shoots) pickle are just out of the world! More power to you Gayatri (@gdesai89)

While festival is only happening today, the wild foods are growing all around edges of the city, do take a moment to question why hass avocados gets delivered home in 5 min while we’re missing out on the incredible biodiversity!

Last year, with the help of @ooofarms , we brought wild Akkarghoda back from the forests of Palghar to our fermentary.

We pickled it, left it for a year, and this monsoon, took it all the way back to the families who had harvested it for us.

There was Akkarghoda, Bamboo, Ambada, Terda, Khurasni, Mahua and a lot of conversations about how wild food is changing, how it's eaten, and how we might preserve it for longer.

This year, 400 jars of pickled wild food are coming to you.

Old wild food. A year's worth of fermentation. A little touch of our own.

It is a matter of immense pride for RPH College to host the Wild Food Festival for the second time, in collaboration with OOO Farms and Chef Thomas Zacharias, Founder of The Locavore.
👨‍🍳 A unique learning experience for our students!
Our students are being trained under the guidance of Chef Thomas Zacharias, exploring the incredible potential of indigenous ingredients and innovating dishes for an elaborate High Tea menu featuring a diverse range of indigenous vegetables.
🌱 The tasting menu and dinner will be prepared by members of the tribal community, supported by dedicated culinary volunteers, bringing together traditional knowledge, indigenous ingredients, and contemporary culinary techniques.
✨ This festival is a true collective effort. Under the guidance of the faculty of RPH College, every department plays a vital role in bringing this extraordinary event to life, with contributions extending far beyond the Culinary Department.

The Wild Food Festival by @ooofarms celebrates India’s incredible biodiversity through the ingredients, communities and traditions that have kept wild food alive for generations.

For this year’s festival, we’ve created our own interpretation.

Our Wild Focaccia is made with Kala Gehu flour and Kharshinga folded into the dough, served with house-made stracciatella, Kurdu relish, brine-pickled Pendhra, and finished with aged Parmesan and Kurdu herb oil.
