Y’all love to eat them—but do you know what’s going on inside before you slurp it away?
This is Oyster Anatomy 101: the adductor muscle holds the shell tight, gills filter nutrients from the water, and the mantle, stomach, and gonad fuel growth and flavor.
Healthy anatomy = healthy oysters = a better bite.
From bay to plate, it all starts here. A whole living system grown patiently in the Gulf and finished on your plate.

Mother Nature pulled rank, see you on Dec 6th.

Rather than cancel the event, or compromise what this festival stands for by pulling oysters from outside the state, or have only a few farms represented, we’re giving the coast and the farms a little more time.

Proud to announce we will have the full lineup attend, and 2 additional farms join the new date.

Matagorda Pearls by @oyster_bros (aka The Texas Coast Cowboys) have been a staple since our first Texas Indie OysterFest, being shucked, dressed and served by so many amazing chefs.

From @chefmichaelcarranza at @tareaustin to @evanleroybbq at @leroyandlewis, @coolhandluke54 at @josephinesgulfcoast, to @bobbymatos at @laluchatx. They’ve always made our festival goers proud with their consistent cultivation, clean shucks, and culinary creativity.

We’re excited to see what kind of flair they bring on October 25th, at The Far Out Lounge.

South Padre Island, you were one SHELL of a party.

Texas oysters, sunshine, cold drinks, good music, and a whole lot of people who showed up ready to shellebrate what makes Texas seafood so special.

To our incredible oyster farmers, chefs, vendors, bartenders, staff, the crew at the Captains Cove, and everyone behind the scenes… thank you. You brought the talent, the energy, and the heart that made Texas Sun & ’Sters what it was.

And to everyone who came out, ate oysters, drank, laughed, fist bumped the chefs, met a farmer, asked questions, or simply soaked up the South Padre sun, this was for you. 🫶

Texas Sun & ’Sters Oyster Festival is just 2 days away in South Padre Island!

Get ready for an afternoon celebrating Texas oysters, Gulf-to-table flavors and some of the best chefs in the Valley and beyond. You’ll get to taste oysters from Texas farms like Matagorda Pearls and Salty Sisters, while enjoying creations from incredible chefs from across South Texas.

We’ll also have vendors, face painting, live DJ, cold drinks, birding and nature center, oyster shell recycling, games, merchandise and more.

A day well spent on the Texas coast. 🦪☀️

@pepper_sanch and I headed to Palacios to spend the day with @oyster_bros and got the full experience. We learned about their process, headed out to the oyster farm, saw firsthand what goes into growing these beauties, and got to taste the finished product.

The oysters were incredible, but the hospitality might have been even better. The Bros, their wives, and the entire team welcomed us like old friends and made the whole experience one we won’t forget.
