When you come across some special ingredients, it only makes sense to run a special dish. I discovered some huitlacoche shucking corn, and sautéed it along with some beautiful grey shallots from our friends at @froggymeadow and some Calabrian chile to top these @ansonmills Carolina Gold corn and rice fritters, made with the aromatic rice and rice powder, and served with a smoky blue creme fraiche. 📸: Chef @zoeschor & ➡️to see what the huitlacoche looked like when I found it!
