I didn’t really follow a recipe for this one except using gelatine in the pineapple juice, caster sugar and Malibu!

I didn’t think it was going to set but, it did! This is the lightest cheesecake I’ve ever made and it’s so refreshing with that pineapple! There are even chunks inside. The biscuit base is made from digestives and I added a bit of dessicated coconut to run the coconut flavour all the way through!
