I’m in my cheesecake era in 2026! I’ve been wanting to make a tiramisu for absolutely ages, however I found @janespatisserie’s recipe where it was a cheesecake! I’m not the biggest fan of coffee, so I added amaretto in instead of a coffee liqueur for the sponge fingers. Cannot wait to try this later! #baking #cheesecake #tiramisu #dessert #bakersofinstagram by @goodnightbaker

It’s my partner’s birthday weekend and I made one of his favouirie chocolate bars into a cake! I used crunchie spread and made vanilla and honey buttercream for decoration and inbetween the sponge. I decorated his cake with golden stars. Fair to say he enjoyed it, he even had seconds!🤎 // #crunchie #chocolate #baking #baker #bakebakebake #crunchiecake #icing #buttercream #honey #bakesofinstagram #cadburycrunchie #birthdaycake #boyfriend #myguy #soinlovewithyou by @goodnightbaker

Gosh the last time I baked was back in February and now it’s summer! Thought I’d whip up a cheesecake over the weekend and made this fresh summer berries cheesecake. I used strawberries, raspberries and blueberries and added a tiny bit of lime juice for that zestness. I used whipped cream icing on top and some red sugar sprinkles and hearts. Fruit in every bite!

I’m due to bake again soon for my work as I’m leaving and it’s the least I can do as I will miss who I work with. I’m not quite sure what yet but something I can easily bring in to work😌

In recent months, I have really struggled to be well and truly motivated to bake. I’ve baked a few times where cakes have (no joke!), exploded in the oven to not baking correctly and decorating ideas really not going to plan. I was disheartened as I enjoy baking so much. It’s been a tough year in 2023 and this year still started with a loss. Even if I was in a good mood, subsconciously I wasn’t and I got so so upset when things went wrong when I followed everything/baked how I know…

Last night however, was a sparkly glimpse of hope and with my partner coming round, I wanted to bake so badly and prayed it went right. It did! Using a heart-shaped tin, I made chocolate fudge cake, but rather than two cakes and filling I opted to do one (plus I only had one of these tins anyways). It turned out amazing, and I love my decorating too. I think I’ve got my baking talent back and can’t wait to do more!

The next bake will be for Mother’s Day that is quite early this year on the 10th March. It’s going to be a cheesecake for sure as they’re my mum’s favourite. It’s good to be back and thank you to those who have waited ever so patiently for a bake to appear from me🤎❤️

What an absolute genius @janespatisserie is combining lemon drizzle cake with cheesecake. This was so fun to bake as a (for now) last cheesecake recipe! The lemons certainly make this cake look fancy and fresh!🍋☀️

It’ll be soon time to make some autumnal bakes, including Halloween! Think this will be the last cheesecake for a while…

This was incredibly light yet chocolatey at the same time… I even decorated this one with Galaxy minstrels and even used crushed up Galaxy ripple as well as, dark and white chocolate curls and chocolate sprinkles around the cream icing.
This went down a hit, with some new people tasting one of my bakes #meetingsomefamily and I definitely sweetened them up!

This is by far the most moist cake I’ve ever made and the icing hits different!

Would you believe there is coffee in this chocolate cake? Coffee can really enhance chocolate, intensifying it and making it rich to taste. It can also make the cake more fudgey.

I decorated this with chocolate curls, white chocolate sprinkles and chunks of chocolate fudge. I Ofcourse used the 1m Star piping nozzle by @wiltoncakes making rosettes of chocolate goodness.

This is a chocolate lover’s dream!🤎💭

I didn’t really follow a recipe for this one except using gelatine in the pineapple juice, caster sugar and Malibu!

I didn’t think it was going to set but, it did! This is the lightest cheesecake I’ve ever made and it’s so refreshing with that pineapple! There are even chunks inside. The biscuit base is made from digestives and I added a bit of dessicated coconut to run the coconut flavour all the way through!

I made this yummy gluten-free traybake for my work colleagues and they absolutely loved it!

Inside there are white chocolate and milk chocolate chips along with that summery raspberry to add a touch of tartness, then I drizzled the chunks in dark chocolate adding frozen dried raspberries on top.

I absolutely love baking with fruit especially raspberries. Love that you can see the bits of fruit inside the bake! It was in the oven longer than an ordinary blondie or brownie as the fruit is full of moisture and so needs to still bake through!

Here’s to more summer baking!☀️🥂//

Probably my quickest bake ever! I used Nutella, small amount of plain flour, some cocoa powder and two eggs. They were in the oven for 20 minutes and came out looking like this once cooled!
Taste of Nutella sweet goodness!

I’m off to the Lake District tomorrow camping for a few days which I’m excited for! Nothing beats being out in nature. I’ll be baking again from next week!👀

The last time that I made this was for Father’s Day two years ago. The last Father’s Day cake I’d ever make for pops…

It’s crazy that the day before my Dad passed away, I was trying to make Red Velvet Cupcakes ready for his return from Mallory Racetrack and they had gone terribly wrong… The icing was atrocious, but I had never worked with cream cheese icing before. I had kept them as the cake itself was tasty and I wanted to surprise Dad with them since they were a favourite of his (I’m ofcourse talking about the Costco ones that my sad little cupcakes couldn’t possibly beat). Sadly, he never got to try one. One day I’ll master the cream cheese icing. I hope there’s a kitchen up in heaven full of baking equipment I could only dream of so I can make a right belter of a red velvet cake and more for him!💙⚡️💧

You cannot go wrong with Bakewell anything whether that’s cake like this one, tart, pudding or even flapjacks! I love the smell of almond extract in the kitchen! I’m surprised I didn’t wolf this down, or maybe I did after I took a few pictures?👀

🏁 𝑳𝒆𝒈𝒆𝒏𝒅 𝑶𝒓𝒆𝒐 𝑪𝒖𝒑𝒄𝒂𝒌𝒆𝒔🏁
I had a right challenge last weekend for a memorial party for my Pops. There was nearly 90 people there and I made 96 of these bad boy Oreo cupcakes. I used stars, blues and racing flags for decoration and ofcourse the icing is Oreo buttercream.

My father sadly was tragically killed on a scooter race track where he was still a newcomer to the sport. With it being a year since he passed away, me and my mum thought it’d be a nice idea to bring everyone together and reminisce and have a drink on him! It was a bittersweet night but it shouldn’t have been this way. I’m glad I managed to get through baking so many cakes for the party and got good feedback too (Some people even eating a second!). I cried a few times whilst baking whilst listening to songs that remind me of my old man. I miss a lot. He was a big fan of my cakes, he loved my caramel cookie cups and lemon drizzle cakes. I wish he could have tried one.
🏁🛵💨 Keep on racing Dad, love you millions…
