My inner child loves eating 🌈 plates bursting with colors! What better than a bed of sprightly radicchio leaves to color em tacos! I love it's slightly bitter taste and texture, it adds a whole other dimension to tacos! Sautéed jewel sweet potatoes enhance their natural sweetness. My new fav beans are canary beans! They are oh so buttery and quick cooking! You can sub w any beans. The star of these tacos is a tomatillo sauce, which adds the right touch of sour, heat and garlicky yumminess. Blitz one tomatillo, 1 clove garlic, 2 Thai red chillies, 1/4th green bell pepper, 1/4 tsp salt. Tomatillos are super sour and taste great raw, you don't need to cook this sauce. Feel free to add corn, vegan or reg sour cream, cilantro and lime juice for added pop. Joila! 💃
