RECIPE: CRISPY SMASHED SWEET POTATOES WITH LIME YOGHURT & SPICY LIME PICKLE Sweet, sticky, crunchy, sharp, spicy and cooling all at once. One of my absolute favourites! INGREDIENTS For the sweet potatoes * 4 medium sweet potatoes, skin on * Half a tbsp baking powder * Olive oil * Flaky salt * Runny honey For the lime yoghurt * 250g unsweetened Greek yoghurt * Zest and juice of 1–2 limes * Flaky salt To finish * Store bought Indian lime pickle (my fave!!) * Fresh jalapeño, finely sliced * Fresh coriander * Lime juice METHOD 1. Cut sweet potatoes into chunky rounds (not too small!) and boil in well-salted water until completely fork tender. Preheat oven to 200°C fan. 2. Drain well and leave to steam dry in the pot for a few minutes. Add baking powder, cover and give everything a good shake to rough up the edges. 3. Spread onto lined baking trays and smash flat with the bottom of a glass. Drizzle very generously with olive oil and season with flaky salt. 4. Roast for around 45 mins or longer until deeply golden and crispy. Drizzle with honey and return to the oven for another 5 mins until sticky and caramelised. Watch carefully as they can burn quickly! 5. Mix yoghurt with lime zest, juice and plenty of salt until lovely and tangy. 6. Spread potatoes onto a platter, blob generously with lime yoghurt, spoon the lime pickle all over and finish with fresh jalapeño, coriander and a squeeze of lime. For those wanting to go the extra mile, I’ll be sharing my homemade spicy jalapeño pickle recipe over on Substack later this week. It’s sharp, mustardy, slightly funky and absolutely addictive. Link in bio! Save this one. I promise you’ll make it again!
