Chicken Marsala should be creamy without cream. Thin chicken breast, mushrooms, Marsala wine, garlic, rosemary, parsley, butter, vegetable stock, flour, EVOO, salt and pepper. That’s all you need for a rich, silky sauce and tender golden chicken. The secret is using real Marsala wine and cooking everything in the same pan so you keep all that flavour. Comment MARSALA and I’ll send you the full recipe. Would you serve it with bread to mop up the sauce?

Send this to someone who loves Jaffa oranges. Around the 1840s, near Jaffa, Palestinian farmers found a new orange: oval, sweet, thick-skinned, almost seedless. They called it Shamouti. The world called it the Jaffa orange. Jaffa shipped about 200,000 oranges in 1845 and around 38 million by 1870. By the 1930s citrus was Palestine's biggest export. In 1948 the people of Jaffa were driven from their city and their groves. The name on the crates stayed. Palestine, Before. Episode 2. Episode 1, the newspaper called Palestine, is on my profile. Next: the cinema that lit up Jaffa's nights. Who in your family still talks about the oranges? My story, my words, my voice, recreated digitally.
