Here is how I made them!!

Caramel Apple Cheesecake Egg Rolls

Apple Filling

4 apples, diced
4 tbs butter
1/2 cup brown sugar
Cinnamon

Cheesecake Filling

8 oz cream cheese, softened
1/3 cup powdered sugar
2 tsp vanilla paste

Egg Rolls

10 egg roll wrappers
Cinnamon sugar
Oil for frying

Caramel Sauce

1 stick butter
3/4 cup brown sugar
1 can sweetened condensed milk
1/2 cup corn syrup

Instructions

Add the apples, butter, brown sugar, and cinnamon to a saucepan. Cook over medium heat, stirring occasionally, until the apples soften and the sauce thickens. Remove from heat. In a bowl, mix the cream cheese, powdered sugar, and vanilla until light and fluffy. For the caramel, melt the butter in a saucepan over low heat, then add the remaining caramel ingredients. Stir occasionally for about 10 minutes, until the sugar dissolves and the sauce begins to bubble. Add a couple tablespoons of cheesecake filling and a spoonful of apples to each egg roll wrapper. Wet the edges and roll tightly to seal. Fry in hot oil until golden brown, then coat in cinnamon sugar. Serve warm with caramel sauce for dipping!

Ad - For all my fellow autumn hibernators. I love starting my day with a crisp dog walk, then coming home, lighting a candle and getting cosy.

Part of my daily ritual is a nice warm coffee in my favourite mug, with one scoop of @ancientandbrave True Collagen stirred in.

I think It’s the small things that make the shorter days feel extra calm and cosy, don’t you?
