1: our processing slots are booked 12+ months in advance so I KNOW how many carcasses I need to presell
2: 20% goes to boutique butchers at a wholesale price and 80% is direct to consumer
3: We offer everything from 1lb of ground to a whole cow
4: we deliver twice a month round a 4hr radius. We don’t ship (but you absolutely could!)
5: I use my EMAIL LIST to sell special items and PRE SELL beef 6months in advance.
Our REVENUE is $80K a month and we work to a 35% gross margin.

We could do more every month but we’re restricted by availability of processing slots.
We didn’t start at 20 a month, we started at just 2! Then we grew from there. The key is taking that fear and risk away by pre-selling.
