Time to pop my own bubble! 🫧

I’ve spent most of my life encouraging people to get outside their comfort zones, try new things, meet new people, and POP THEIR BUBBLES!

But lately I’ve been realizing something… maybe it’s time I popped a few of my own!

I’m pretty good at running around the world (literally haha), saying yes to adventures, and finding joy in the little things. But slowing down, looking inward, and asking myself some of the harder questions? That’s a whole different kind of adventure.

So here I go! I’m heading to Rythmia in Costa Rica for a week of self-exploration, reflection, and hopefully a little personal growth.

I’m excited, nervous, curious, and honestly have no idea what to expect. And I think that’s okay. Maybe that’s the whole point!

I want to share this journey with you because I think we all have bubbles we don’t even realize we’re living inside. And sometimes the biggest adventure isn’t going somewhere new. It’s discovering something new about ourselves.

So…Here’s to getting curious, getting uncomfortable, and continuing to grow! ❤️

P.S. Please excuse the sunscreen all over my face and whatever small creature may or may not be living in my hair. Pretty sure it’s a sea creature. 🦀😂

A little transparency: Rythmia has invited me to attend their retreat as part of a media trade. My stay is being provided in exchange for sharing content about my experience. As always, the thoughts, feelings, and experiences I share will be my own. I’m going into this with an open mind and no promises about what I’ll discover.

Happy 25th Anniversary babe! I love you more than words can say and I just can’t believe it’s been 25 years since we said I do. 5 kiddos and 4 grands later, we are truly blessed. I’m incredibly grateful for this life God has allowed us to have. I love growing old with you Jules Jeptha! Thank you for being someone I can laugh with, be silly with, dream with, cook with, fight and makeup with 😜, and someone to fight for. You are my bestie, bff, and I will love you always and forever! #happyanniversary

Follow the recipe below ⬇️

Ingredients:

Step 1: Marinade
2 Chicken Breast ( Best to use thighs )
1/2 tsp Turmeric Powder
1/2 tsp Chilli Powder
1/2 tsp Cumin Powder
1/2 tsp Salt

5 tbsp Oil ( frying and cooking )

Step 2: Masala Base:
3 Bayleaf
2 cinnamon Sticks
1 tbsp Garlic ( Homemade)
1 tbsp Ginger Paste ( Homemade)
2 Large Onion ( Blended in to paste )
Salt to taste ( add Accordingly)
1/2 tsp Turmeric Powder
1 tbsp Kashmiri Chilli Powder
1 Tbsp Chilli Powder
1 tsp Cumin Powder
1 tsp Coriander Powder
1 Tbsp Garam Masala
1 tbsp Mix Curry Powder @rajahspices
1 tbsp Tomato Paste

Topping: Step 3
3 Small Red Onion
1/2 Red Pepper
1/2 Green Pepper
5-6 Green Chillies
Handful of Chopped Coriander

Method:

◾️Wash the chicken and cut it into your desired size.
◾️Marinate the chicken using the spice seasoning listed in Step 1. Set aside.
◾️In a pan over medium heat, add the oil.
◾️Once the oil is heated, add the chicken and fry on both sides until lightly coloured. (This can also be done in the air fryer.)
◾️Remove the chicken from the heat and set aside.
◾️In the same pan, add the whole spices, followed by the garlic and ginger paste.
◾️Add the onion paste and salt. Stir until the onion turns golden brown. This should take approximately 10 minutes.
◾️Add all the spices listed in Step 2 and cook until the raw spice smell disappears.
◾️Add the tomato paste. Add a tiny amount of water at intervals to prevent the masala from burning.
◾️Bhun the masala using the traditional bhuning technique, continuously stirring until the oil separates.
◾️Add 1 cup of water and continue stirring until the water has reduced by approximately 50%.
◾️Add the fried chicken and stir well.
◾️After 2–3 minutes, add ½ cup of water.
◾️Add the peppers and red onions and give everything a good stir. Cook for a further 5–6 minutes.
◾️Top with green chillies and garnish with fresh coriander.

◾️Enjoy with a hot plate of rice. 🍚
