Pickle sheets just make sense 🤭
🥒 Another Day, Another Oi — Episode 3.
A series where I share fun cucumber recipes 🥒
You guys probably already know I love making pickled vegetables, especially ssam-mu (Korean pickled radish wraps). Since cucumbers are everywhere right now, I decided to make pickle sheets using both cucumbers and radish 🤭
Koreans don’t just eat pickles on the side... we love wrapping and rolling all kinds of foods with them 😂 They’re so fun to eat and surprisingly versatile.
Wrap them around Korean BBQ, cold noodles, rice, or just about any of your favorite fillings. If you’ve never tried using pickles this way before, I highly recommend it. I have a feeling you’ll start wrapping everything too 🥒🤍
🥒 Cucumber & Radish Pickle Sheets
- Vegetables
4 Persian cucumbers
About ⅓ Korean radish (or daikon)
- Pickling Brine
1 cup water
½ cup sugar
½ cup vinegar
½ tsp salt
Instructions
1. Slice
Using a mandoline, thinly slice the cucumbers lengthwise. Thinly slice the radish into similar-sized sheets.
2. Layer
Alternate the cucumber and radish slices in a container.
3. Make the brine
Bring the water, sugar, and salt to a boil. Turn off the heat, stir in the vinegar, and let cool slightly.
4. Pickle
Pour the brine over the vegetables until submerged. Refrigerate overnight.
