Boy Dinner Night: Steakhouse edition! Brought to you by blue cheese and bacon - I cut up some bacon strips into lardons, sauteed them in the cast iron pan to cook them and render the fat, so I could cook the steak in the bacon fat. Strip steak, classic wedge salad with celery and carrot for color and texture, baked potato, and everything had blue cheese and bacon on it (I even broiled the steak topping to melt it, and also crisp up some panko breadcrumbs I topped it with). Served with 2023 @maxvillewinery Napa Cabernet.
