crispy rice paper chicken bites 🥟

If you are looking for the most delicious, high-protein appetizer, this is the one, I promise! These air-fried rice paper chicken bites are not only delicious and crispy, but they are gluten free AND dairy free! I am so excited to be sharing this amazing recipe with you all.

Recipe:
Mix together with your hands in a large bowl (I use gloves):
- 1 lb ground chicken breast
- 1 cup shredded carrots
- 1/3 of a white onion, chopped
- drizzle of tamari soy sauce (or regular if you do not need GF)
- 1 large egg
- 1 tsp garlic powder
- 1 tsp onion powder
- dash of salt & pepper
- OPTIONAL: 1 tbsp chili garlic oil

Scoop that mixture into a ziplock bag and cut the corner (like frosting!). Dip your rice paper flat into warm water for a couple of seconds on both sides to soften it and then lay it flat on a dry plate. Then, squeeze the chicken mixture horizontally onto the bottom 3rd of the rice paper and fold like a burrito: fold the bottom up, the sides in towards the center, and roll.
Cut the roll 4-5 times with a chicken scissor to make little bite-sized pieces. Complete this process with more rice paper until you run out of your chicken mixture.
Spray the pieces on both sides with an olive or avocado oil spray before air frying at 400 F for 12-15 minutes to start.
Flip the bites after about 8 minutes. I usually end up needing to cook them for an extra 5-ish minutes so that they crisp up, but every air fryer is different.
Serve with GF hoisin sauce like me, make a peanut sauce (peanut butter, tamari soy sauce, & maple syrup), or just serve with plain old tamari soy sauce.
Enjoy😋
