I have been a little bit obsessed with peaches recently, so naturally recreating a classic Peach Melba in petit gâteau form was the only option for my next project.

Sweet, sharp, creamy, nutty and unapologetically summery.

A classic combination, stripped down to its essentials and then, inevitably, built back up into something considerably more elaborate. A little more complicated than it needs to be. Probably a little more work than anyone asked for. But that's pastry for you.

Because apparently, I can't just eat a peach. 🍑
