I wanted apple bread that actually tasted like apple pie.

So instead of just throwing raw apples into the batter, I cooked them down first with brown sugar, and apple pie spice until they were soft, glossy, and basically apple pie filling.

Then I folded those cinnamon apples right into the bread and piled more on top. The result is a soft apple bread with little pockets of spiced apples throughout.
