Marie biscuits with a glass of milk... such a beloved treat when I grew up.This cake brings those teatime memories together and tastes like pure childhood nostalgia!
Marie Biscuit Cake
1 packet Marie biscuits, finely crushed using a Nutribullet or food processor
125ml cake flour
15ml cocoa powder
15ml cinnamon
10ml baking powder
230g soft butter
250ml
@huletts_sa yellow sugar
5 large eggs, separated
10ml vanilla extract
For the Filling & Topping:
1 packet instant vanilla pudding
250ml milk
250ml cream
Fresh passion fruit (granadillas)
Instructions:
Preheat the oven to 180°C.
Line baking trays with baking paper and draw four 18cm circles across the paper.
Mix the dry ingredients (crushed biscuits, flour, cocoa, cinnamon, and baking powder) together.
Cream the butter and sugar together, then beat in the egg yolks.
Add the butter mixture to the dry ingredients and mix well.
Whisk the egg whites until stiff peaks form, then gently fold them into the thick batter.
Divide and spread the batter evenly over the 4 drawn circles on the baking paper.
Bake for 15 minutes.
Remove from the oven and allow to cool completely on the baking paper.
Make the filling:
Beat the instant pudding with the milk and let it set slightly. Whip the cream until stiff, then beat it into the pudding mixture.
Assemble:
Spread the pudding mixture onto each layer and top with fresh passion fruit pulp.
