Crisp, smoky whole seabass brushed in a bright olive‑herb sauce as it cooks - garlic, rosemary, coriander, lime and lemon all melting and seeping into the fish, giving it that bright, aromatic lift. Seasoned simply with salt, black pepper, and fresh lemon.

Served whole with roast potatoes, lemon slices, a bowl of extra olive‑herb sauce on the side, and a fiery garlic‑red chilli dip for that hit of heat.
