Makes 4 to 6 servings
2-pound butternut squash, scrubbed
1 halved yellow onion
1 halved garlic bulb
Extra-virgin olive oil
1 x 15-ounce can lentils, drained and rinsed
4 cups whole milk, plus more as needed
1 teaspoon paprika
1/2 teaspoon cayenne pepper
Salt
Toast, for serving

Heat the oven to 425°F (215°C).
Tightly wrap the squash in 2 layers of aluminum foil and bake for an hour, up to 1 hour and 30 minutes, until completely softened.

Add the onion and garlic to a small baking dish. Drizzle with olive oil and arrange cut-side down on the pan. Bake for about 30 minutes, until softened. They can be baked at the same time as the squash.

Cool the squash until lukewarm. Carefully unwrap the butternut squash and place the whole thing in a large blender. Remove the skins off the garlic and onion and add to the blender with the milk and lentils. Remove the plug from the lid, cover the lid with a towel and blend until smooth. Add the paprika, cayenne pepper and salt to taste. Add more milk if you prefer a thinner consistency.
