The easy way I make Singapore Noodles - with chicken and bacon rather than Chinese BBQ pork and Chinese sausage!

Easy Singapore Noodles with Chicken

100 g/3.5 oz dried vermicelli noodles (not glass noodles), prepared per packet (do this just before cooking)
SINGAPORE NOODLES SAUCE - mix:
3 tbsp light soy sauce , or all-purpose soy (not dark soy)
3 tbsp Chinese cooking wine (Shaoxing wine, sub chicken stock low-salt)
3 tsp curry powder (regular, like Clives, Keens, not spicy)
1 tsp white sugar
1/2 tsp white pepper (sub black pepper)
CHICKEN - toss:
150g/ 5 oz skinless boneless chicken thighs (sub breast or tenderloin), cut in half lengthways then finely sliced into 5mm / 1/5″ strips
1/4 tsp cooking/kosher salt
1/2 tsp curry powder
STIR FRY ADD-INS:
2 tbsp plain oil (canola, veg, peanut)
2 eggs , whisked
100g/3 oz streaky bacon, chopped into small pieces
1/2 brown onion, finely sliced
3 garlic cloves, finely minced
1 red capsicum (bell pepper), deseeded and finely sliced
1 very heaped cup EACH bean sprouts and baby spinach

1. Heat a small amount of oil in a large non stick pan over medium high heat. Add egg and swirl to spread into a thin crepe, cook for 30 sec until surface is just set. Transfer to cutting board, once cool enough to handle, roll up and finely slice = egg ribbons!
2. Add rest of oil into pan over high heat. Cook bacon for 1 min, then add onion and cook for 2 min. Add chicken and stir until surface is white (still raw inside). Add capsicum and garlic, cook for 2 min until chicken is cooked inside.
3. Add (in this order) baby spinach, bean sprouts, noodles then sauce. Toss until sauce reduces and stains noodles yellow. Gently toss through egg ribbons then serve!
