Raw Limousine beef from Rabat, aged for 14 days and dressed with an oyster emulsion.
Served on an aged Maltese Pecorino biscuit with wild capers, foraged by Keith and preserved into a jam, then finished with pickled daikon from a farm in Mġarr.
