The coziest fall dinner we’ve been obsessed with…. Packed with nutrients! Full recipe 👇🏼

APPLE CIDER BRAISED POT ROAST 🥩🍎

2 tbsp extra virgin olive oil
2-3 lb chuck roast
Salt and pepper to taste
2 tbsp gluten free all purpose flour

To a large (oven safe) pot like a Dutch oven, add oil and turn the heat to medium. Once warm, add the roast to the pot and coat with salt, pepper, and gf flour. Let the roast brown on each side for 2-3 minutes before flipping. Remove from the pot.

1 yellow onion, sliced
1 full head of garlic, minced

Leave the brown bits then add in onion & garlic and let cook for a minute or so.

1 cup beef bone broth (I use @kettleandfire )
1/2 - 1 cup apple cider
1 tbsp Italian seasoning
1 tbsp rosemary
2 tsp ginger powder

Pour in bone broth and apple cider to deglaze the pan. Use a spatula to scrape off the brown bits. Stir in the spices.

6-8 large carrots, cut into 2 inch sticks
1 lb baby yellow potatoes

Then, add the roast back in and add in potatoes and carrots. Let the mixture cook for 10-15 minutes until bubbling. Then, cover and put in the oven on 375F for 3 hours.

2 tbsp apple butter, optional

Once done, remove from the oven and brush the apple butter directly onto the roast. Put the pot back in the oven, without the lid, and let the roast cook for 30 more minutes uncovered.

Enjoy!!!
