In southern Mexico City, Xochimilco’s canals and waterways hold the last remaining chinampas, “floating gardens” which once fed the Aztec civilization. Now, this ancient agricultural heritage has found its way onto the global stage.
 
Arca Tierra have just been awarded the Champions of Change Award 2026 by The 50 Best Restaurants Latin America. Brothers Lucio and Pablo Usobiaga are behind the project, an NGO that’s been working diligently for over a decade, reviving abandoned chinampas, working with farming families to bring their produce to the capital’s leading restaurants and training the next generations of chinamperos.

MUCHO MÁS QUE PRODUCTORES 🧑🏽‍🌾👩🏻‍🌾
Nuestro sistema confunde lo que puede monetizar con lo que tiene valor.

No es que el agricultor deje de ser productor. Es que produce mucho más de lo que le reconocemos.  Produce alimento, pero también puede producir fertilidad, biodiversidad, infiltración de agua, paisaje, conocimiento, cultura, comunidad y resiliencia.

El problema no es simplemente que llamamos productores a los agricultores. Es que hemos construido un sistema que les pide comportarse solamente como productores: “Tu trabajo es producir más alimento, de manera más uniforme, al menor costo posible.”

El lenguaje más que el problema es un síntoma de algo más profundo. 

Cuando decimos “recursos naturales”, pasa algo parecido. Eso revela algo profundo sobre nosotros: miramos el mundo preguntándonos qué produce para nosotros.

Imaginen el cambio si en vez de ver a quienes cultivan la tierra por lo que extraemos de su trabajo, los empezáramos a reconocer por el inmenso valor que dan a toda la sociedad. 

La agricultura bien hecha no es simplemente extracción de naturaleza. Es ser parte de los procesos de la naturaleza. El agricultor no “produce” un jitomate como una fábrica produce una silla. Trabaja con suelo, bacterias, hongos, insectos, lluvia, semillas, temperatura, ciclos y tiempo. No controla completamente ninguno de ellos. Observa, interviene, cuida, selecciona, espera.

Llamarlos productores no es falso. Es insuficiente. Que la palabra con la que hemos decidido definir a quienes cuidan de la tierra sea precisamente la que describe aquello que podemos comprarles, dice mucho del sistema en el que vivimos, y de nuestra relación con la naturaleza.

Systems, by Nature

Systems can take many forms, but none of which are as complex and interconnected as nature. We are the products of and participants in an inextricably linked network of relationships that balance our health, and the health of all other living things, allowing for our existence. 

The most recent centuries of human existence have sought to remove us from that connection to nature, placing ourselves in a higher role, capable of designing ourselves out of this web. But in humanity’s quest to control, we are increasingly powerless to the magnitude of our errors. Our only way back to connection with nature is to embrace the systems from which we came and look to our world as a blueprint for how to build symbiotic relationships and closed loop processes into human designed systems.

So how can this lofty, seemingly philosophical, diatribe be applied to our tiny restaurant in Mexico City?

A zero-waste restaurant’s system seeks to close the loop on ingredients and, just as it is in nature, assign purpose to all elements of the ecosystem. By design, the system reflects nature and soon the web of interconnectedness multiplies until we have our own ecosystem, presented to the guest as a menu, living with moving processes that enrich one-another in a constantly shifting dance.

A system. Built and maintained by humans as participants in nature. In the eye of nature. In the centre of one of the largest cosmopolitan cities in the world. This is the beating heart of Baldío.

MILPA MEDICINAL CHINAMPERA 🪻🌽🪄
En una de nuestras visitas a las chinampas de hace unos días, Sonia y el equipo de agricultura de @arca.tierra nos llevaron a una chinampa que recuperaron sembrando una milpa mezclada con plantas medicinales. Fue realmente increíble. 

Esa chinampa, que hace apenas unos meses estaba completamente abandonada, fue transformada por Ili y los estudiantes de la Escuela Campesina de @iax.ac en algo verdaderamente hermoso.

Sonia nos contó que, en el proceso de recuperación, descubrieron que al sembrar plantas medicinales junto con la milpa, todo crece más fuerte, más sano… y más bonito. Las plantas medicinales no solo nos curan a nosotros: también sanan la tierra. Una milpa con superpoderes. 💪🏽

Entre las plantas medicinales que son parte de esta milpa están la centuria, toronjil, arnica, artemisa, azúcar azteca, gordolobo, milenrama, mirto rosa, pitiona, poleo, salvia. 

Qué especial (y que suerte tenemos de) ir a las chinampas, escuchar a Sonia y a Ili, ser testigos de la inteligencia de la milpa, de la herbolaria medicinal, de la naturaleza en general. 
Como diría Ernst Götsch: “No somos los inteligentes, somos parte de un sistema inteligente.”

On a recent visit to the chinampas, Sonia and the Arca Tierra agriculture team took us to a chinampa they’d brought back to life by planting a milpa intercropped with medicinal plants. Just months ago, it was abandoned.🌿

Sonia explained that growing medicinal plants alongside corn, beans, and squash makes everything stronger, healthier… and more vibrant. These plants don’t just heal us — they heal the soil. A milpa with superpowers.

Among them: centaury, lemon balm, arnica, mugwort, Aztec sugar, mullein, yarrow, pink myrtle, pitiona, pennyroyal, and sage.

Visiting the chinampas, listening to Sonia and Ili, is a reminder of the wisdom embedded in the milpa, in medicinal botany, in nature itself.

Pablo Usobiaga (@pablouso) of Arca Tierra (@arca.tierra) believes the future lies in the past. 

He works directly with campesinos—peasant farmers—to recover Mexico’s 4,000-year-old chinampas: floating gardens that once fed 1.5 million people. Today, less than 10% of them survive. 

Campesinos are their custodians. Some of society’s most overlooked workers, campesinos are in fact on the frontlines of our climate crisis. As Pablo explains, they are guardians of critical knowledge. Learning from them is how we’ll walk ourselves back from the ecological cliff.

Cada vez que camino por la Baldega: la cámara fría, el cuarto de fermentos, los refrigeradores, congeladores y esos cientos de estantes, me doy cuenta que estoy frente a ingredientes creados con mucho amor por cientos de familias campesinas y transformados con el mismo amor por nuestro equipo. Ingredientes, pócimas, preparaciones que concentran un montón de paisajes de México y que guardan, sobre todo, el pasado, el presente y el futuro de Baldío.

Desde la concepción de Baldío (incluso el nombre lo sugiere) creemos que la única forma de relacionarnos con la naturaleza es reconociendo nuestra vulnerabilidad, interdependencia, y la necesidad de redefinir lo que significa “control” (o soltar esa idea por completo).
 
Creer que dominamos la naturaleza no solo es ingenuo, es peligroso. Esa mentalidad naturaliza la explotación, la extracción y borra la interdependencia entre humanos y ecosistemas.
 
Pensar que podemos controlarla es subestimar su complejidad. La naturaleza construye resiliencia a través de complejidad, simplificarla ha sido el objetivo de nuestro sistema alimentario. De ~300,000 especies de plantas comestibles, solo 17 proveen el 90% de nuestros alimentos. Una máquina eficiente… y profundamente vulnerable.
 
En una cocina, la ilusión del control genera frustración, estandarización y daño ecológico; aceptar la variabilidad abre creatividad, humildad, identidad y sabores únicos. El control absoluto solo se logra con violencia —monocultivo, pesticida, extracción—: la homogeneidad mata el sabor; la diversidad lo multiplica. Es como cocinar con un idioma completo vs apenas unas pocas palabras.
 
Elegir diversidad sobre homogeneidad es elegir aprovechamiento sobre desperdicio, colaboración sobre extracción, conexión sobre desconexión, complejidad sobre simplificación.
 
Como dice @carolynsteel.sitopia : “Parte de nuestra renuencia a admitir nuestra complicidad dentro del orden natural proviene del miedo a reconocer nuestro lugar en el ciclo eterno de crecimiento y decadencia. La negación de la muerte es resultado de nuestra larga lucha por subyugar a la naturaleza y así liberarnos de su abrazo mortal. El regalo más valioso que nuestra visión técnica quizá pueda darnos es la revelación de que ha llegado el momento de abandonar esa lucha. Puede decirse que el mayor descubrimiento de nuestro viaje humano es comprender que siempre hemos sido una parte inextricable de la naturaleza… y, por lo tanto, que siempre hemos estado mirándonos a nosotros mismos.”

The magnificent MAD7 is over but the experience will stay with me forever - it was truly amazing 🤯. Lots of information to digest over the next few days but I’m coming back to Mexico with an overwhelming sense of hope and community. 💪🏽
