Pumpkin and Pork

This was a bit of a fun set. Have always wanted to pair these two together. Typically when I run a set I try to hyper focus on the produce but when pork belly is involved, things tend to change.

Beef and Carrots

Carrot four ways.

•Hassleback Carrot
•Carrot/Fennel Pollen Powder
•Carrot Cylinder

•Aged Ribeye Sauce
•Brown Butter Béarnaise

Typically when we make dishes @husksavannah we aim for zero waste. Well, that’s what this dish is — Zero waste! All of the carrot trim is utilized in either powder or sauce.
