Tonight for dinner I wanted to use this beautiful @packingtonfreerange whole chicken but I am not someone that commits to a full roast on a Monday! Then I remembered the viral @cocolarkincooks chicken au poivre - a whole spatchcock chicken cooked in a cream, peppercorn, sherry, rosemary & shallot sauce. This is the JUICIEST chicken I have ever cooked! Basted every 15 minutes in this gorgeous sauce - what an absolute dream.

I served our chicken with creamy mash, @adambyatt braised carrots using the beautiful rainbow carrots from our @wylde_market delivery, romanesco & cavolo nero absolutely divine 🙌🏼 taken in Stratford-upon-Avon, Warwickshire by @packingtonfreerange

Today we had the most delicious dinner and Jord gave my chicken a 12/10 which NEVER happens, so that's when you know it was good!!

I was going to make homey mustard chicken but I have had so many homegrown tomatoes that needed using and enjoying whilst they were still fresh so I decided to pivot and boy am I glad I did!

Sundried tomato, fresh mozzarella, sausagemeat and pesto stuffed @packingtonfreerange chicken breasts wrapped in their stunning bacon. I cut off the streaky part to use for the chicken and kept the rest for another meal. This is beautiful thick cut bacon so I pounded it thin which means it covered the stuffed chicken breasts beautifully! These were huge! I sealed the chicken in a hot pan then I added tomatoes, garlic, homemade chicken stock and white wine, then transferred it to the Ninja Combi to bake for 25 minutes. When the chicken was done I removed the cooking liquid and blitzed a majority of the tomatoes with Parmesan cheese & a splash of @oatly creme to make a gorgeous sauce! I was craving cosy, comforting and cold clearing goodness this evening, and these soy braised chicken wings with sticky jasmine rice & braised cabbage was such a perfect dinner!

First I made homemade chicken stock using a roast chicken carcass I pulled out the freezer and simmered with garlic, ginger, shaoxing wine, dried shiitake mushrooms, spring onions & star anise to get a beautiful golden broth.

Using @packingtonfreerange chicken wings I cut off the wing tips and added them to my stock, then separated the flats and drums. I scored the flats so the braising liquid can absorb into all the meat. I lollipopped the drums, removing the tendons for a delicious tender bite. These wings are such a good size, you get tonnes of meat and they are super versatile.

For the braising liquid I used dark & light soy, oyster sauce, garlic, ginger, a dash of black vinegar and rock sugar. I added a ladle of my homemade chicken stock. I covered my wings with some parchment paper and let them simmer away, gently braising whilst the broth slowly thickened into a beautiful sticky sauce, whilst keeping the meat beautifully tender.

I cooked my jasmine rice in half broth/ half water for a rich sticky rice and braised my cabbage also. After the photo I added a ladle of hot chicken stock to my bowl which mixed with the @rishrightuk Yo Po chilli crisp and brought everything together in the most comforting bowl of goodness! taken in Stratford-upon-Avon, Warwickshire by @packingtonfreerange

I have been SO looking forward to this all week knowing my @packingtonfreerange delivery was arriving today!

These skin on chicken breasts I was kindly sent from Packington are such a consistently spot on product. I actually cut the tenderloin off the breast and kept them for another meal because they are such a good size! I flattened the chicken to make it an even thickness all over then pan fried the chicken skin side down on a medium low heat. Starting the chicken in a cold dry pan to get a beautiful golden crispy skin. I seasoned the other side with paprika, olive oil and a lemon & herb seasoning blend. When the chicken naturally released from the pan after about 8 minutes i flipped it over briefly to seal the underside then popped it in the air fryer on bake 180 for 5 mins until the internal temperature was 70 degrees, and let it rest. This gave me the most delicious juicy chicken with a golden crust. Whats not to love! I love that this chicken doesn't release loads of water when it is cooking and has a beautiful texture.

I served this with Mafaldine pasta in a Tuscan chicken sauce, enjoying some of my home grown cherry tomatoes whilst we still can! I am loving Mafaldine pasta at the moment, it is a robust pasta with a good bite and can hold up to big flavours and rich dishes. It is the perfect Autumn pasta when you want something a bit more substantial.

Diced Sweet white onion, the zest of a lemon, a few sundried tomatoes finely chopped, chilli flakes, plenty of finely diced garlic, fresh parsley, chestnut mushrooms, a splash of white wine and a homemade chicken stock pot from the freezer with double cream, fresh Parmesan and a good squeeze of fresh lemon.
