If you drink matcha every day, this one's for you. 🍵👀

We're using a continuous glucose monitor to see what really happens after one of the most popular matcha orders in Sydney.

And let's just say... the result wasn't what we expected.

Parami is best known for its onigiri, a convenience store staple in Japan – so it’s no surprise nearby office workers are embracing the cafe’s grab-and-go element for lunch.

But the tiny Surry Hills spot isn’t just about the rice. There are the muffins, too – baked fresh daily using a low-and-slow technique to get their signature soft texture, in flavours like apple cinnamon ricotta and the bestselling banana, chocolate and coconut.

“We sell around 200 every day,” says co-owner Mika Kazato.

In this episode of How It’s Made, we chat to Kazato to see it come together, and why the sweet treat's popularity has only grown over time.
