New year, new experiences! Popped into @urbanveganroots in my neighborhood for a steaming hot lunch and discovered their coconut breaded “konjac shrimp”. A wintertime tradition for me is to make waffles from scratch using a VillaWare *Belgian Waffler that a dear friend gave me.

This year I took on a new challenge, the Liège waffle. It’s a yeast dough with near-equal parts butter and flour, a three-part/overnight dough rise and the final large quantity ingredient is pearled sugar that’s folded in by hand. Cooking is my solution to calm anxiety, single-focused physical effort that (often, not always) produces a delicious accomplishment.

The finished waffle is more complex in texture and flavor, perfect sans toppings, different than the fluffy golden waffles of past years. In the face of uncertainty and sadness about world events beyond my power to solve, this waffle is a ray of hope for 2025.

*I also loved learning through sources like @smittenkitchen that “Belgian waffles” is an oronym for Bel-Gem waffles introduced at the Belgium Pavilion at a World’s Fair in the 1960s by @pclough2014

The best way to see NY on a beautiful autumn day. Thank you @classicharborline and @centerforarch for a fantastic architectural cruise that beautifully connects the past and present across all 5 boroughs of our great city. We learned so much. Congratulations to my partner in love & life @frankdigiacomo on the publication of his first book Paper of Wreckage: The Rogues, Wiseguys, and Relentless Reporters Who Redefined American Media. During a recent weekend in Denver, I visited the Molly Brown House museum. A world traveler thanks to her husband’s early gold mining fortune, she survived the sinking of the RMS Titanic, and used her funds and society connections to raise funds for the less fortunate women and children survivors (read: widowed and fatherless, or single).
After, she advocated for miners’ rights, ran for U.S. Senate (a scandal in extended family caused her to back out) and rallied for rights for all, including advocating for a national suffrage amendment. Her home in Denver is filled with books and art that reveal her advocacy for women, such as the landscape painting by Helen Henderson Chain, an artist and mountaineer who set up a school to teach English to immigrants, after witnessing discrimination against them. While I’m conscious early suffrage was not all inclusive, I am immensely grateful that it is today. Register to vote and make sure everyone in your circle is registered. We have the ability to vote, and to do so in our own and with our friends’, familys’ and neighbors’ best interests at heart. Cast your vote, do not leave it on the table, vote for your rights and the rights of the women of all ages in your life. Encourage your neighbors, heck, encourage people in line with you at the grocery store! This is an all-hands-on-deck event.
