March is coming to an end, which means so is National Nutrition Month! 🥑🥔🥝🍙🍗🍅🌯🥗

As a tribute to National Nutrition Month (and National Registered Dietitian day, which was March 12), I wanted to post something about my job as a sports RD alongside a few photos of my time here at the University of Oregon.

When people ask me "what's the best part of your job?" it's hard for me to answer because I love a lot about what I do. I love educating athletes on how to fuel for their sport and finding applicable ways to explain complex topics. I love that every day is different- how some days I might be on the computer creating educational resources and other days I'm covered in dirt moving 50 cases of Gatorade product and reorganizing a storage room of pallets. I love working around my athletes every day, how they can stop by my fueling station after lift and ask me anything. But my favorite part of being a sports dietitian is when an athlete tells me that something I said has resonated with them and it has changed their view of nutrition- that they've made changes to their nutrition routine and feel improvements in their energy and recovery because of it. As a sports dietitian, I feel it's my responsibility to help athletes feel their best- on and off the field- so it brings me a lot of joy to hear something like that.

I started college as a Japanese major but fell in love with nutrition and decided to transfer and change my major in my Sophomore year. It was the best decision I could have made as I get to do what I love every day.

BANANA OAT MUFFINS

INGREDIENTS
•3 ripe bananas
•1/4 cup maple syrup
•1/2 cup peanut butter
•1/2 cup Greek yogurt
•2 eggs
•1tsp vanilla extract
•2 cups rolled oats
•1tsp baking soda
•1tsp cinnamon
•Salt
•Chocolate chips

INSTRUCTIONS
1. Mash banana and mix with maple syrup, Greek yogurt, peanut butter, eggs and vanilla
2. Mix in rolled oats, baking soda, cinnamon, and salt
3. Mix in chocolate chips
4. Let mixture sit for a few minutes before transferring to an muffin tin
5. Bake for 25-27min, until golden. Place a toothpick through the muffin, make sure it comes out dry. If it’s still wet, place muffins back in the oven for a few minutes.
6. Place in an airtight container

NOTE:
If you want a more flour-y texture, use half oat flour and half rolled oats (just blend 1 cup oats until it becomes fine) and continue the rest of the recipe as written above. #breakfast #mealprep #breakfastideas #bananamuffins by @perrett.nutrition

Variety in your diet > perfection

Eating the same thing every day might make meal prepping easy, but you could be losing out on some important vitamins and minerals.

A big thanks to @erins.table for working with Oregon Athletics this winter term!

Learning how to cook- especially quick, healthy meals- is such a valuable tool but many athletes struggle with finding the time to learn on their own. Having businesses like Erin's that show athletes how to cook nutritious, simple meals can be SUCH a game changer (plus cooking your own meals at home can save tons of 💰)

Thanks Erin, your ducks appreciate you!! 💚💛💚💛💚 by @perrett.nutrition

Sweet-savory turkey bowl with veggies and yum sauce

I tried a slight variation of this recipe from TastyBella.com: https://tastybella.com/ground-turkey-rice-bowls-recipe/ and absolutely loved it! Try it out 👉🏽

Ingredients
•1 lbs ground turkey
•1 tbsp oil (i use avocado)
•3 cloves garlic, minced
•2tsp grated ginger or 1tsp ground
•1/2 tsp paprika
•1/2 tsp onion powder
•3 tbsp soy sauce
•3 tbsp chicken broth or bone broth
•Drizzle of honey
•2 tsp corn starch, optional

•1-2 cups brown rice, cooked

•Veggies: shredded carrots, shredded cabbage, sliced radishes, sliced cucumbers, etc

Sauce:
•1/2 cup mayo
•1 tbsp siracha
•1 tsp rice vinegar
•2 tsp honey

Optional toppings:
•Green onion, sliced
•Sesams seeds
•Edamame

Instructions:
1. Cook rice whatever way you like best (I use a rice cooker)
2. Cook ground turkey, break apart pieces and stir until mostly cooked
3. Once turkey is browning, add all turkey ingredients and stir. Let simmer for a few minutes as you prep the veggies
4. As turkey is cooking, prepare desired veggies
5. Prep sauce by mixing sauce ingredients with a fork in a bowl or Pyrex
6. Assemble bowls and top with optional toppings if desired!
