‘DIlly Dilly’ Crushed Blueberries, Lemon Slices, Lavender Florets, Soda Water Quite by chance this is reminiscent of Campari ! For one drink crush half a punnet of blueberries, add three or four thinly sliced lemon slices, three or four heads of stripped lavender florets and just a small amount of soda water. Let everything macerate for a couple of hours. Strain into a lowball or highball depending on how long you want the drink. Top up with a little soda water to suit the glass. I used clear ice from my @craftklaris maker. #alcoholfree #lavender #bluberries #cocktail #mocktail @nudeglass by @perrigaux
Gooseberry Sour Gooseberry Juice, Elderflower Syrup, Kaffir Lime, Juniper, Egg White Gooseberries were a significant fruit in my wonderful childhood garden. My father grew the green, red and yellow varieties, the latter were by far the sweetest. Difficult to find these days! Here is a sour without any citrus as the gooseberries provide more than enough acidity. #gooseberry #alcoholfree #cocktail #elderflower #kaffirlime by @perrigaux
Ispahan Fresh Raspberry, Lychee Juice, Rose Water Named after the ancient Iranian city this famous flavour combination was created by the illustrious French patissier, Pierre Hermé. The flavour profile particularly relates to the famed ‘Ispahan Rose’. After I left my professional kitchens in Devon and Cape Town I returned to the UK and was unsure of the future. So I studied patisserie and chocolate making as you do ! I became a maker of high end macarons and other miniature treats and at one stage was making up to 2000 macaron per week. One of the flavours we made was Ispahan so this drink is a kind of trip down memory lane. The drink is simple to make. About 60% raspberries puréed and slightly sweetened and elongated by about 20% water…..a good glug of the liquid from tinned lychees…..and a generous teaspoon of rose water. Don’t skimp on the rose water in this case….it needs to be obvious ! The end result is elegant, indulgent and special ! #alcoholfree #mocktail #rose #raspberry #cocktail @zingyzoo by @perrigaux
Cardamom Gimlet (0%) London Dry Juniper ( @its.undone ) 0%, Honey, Lemon Juice, Crushed Cardamom Obviously if you prefer the alcoholic variation use a gin of choice. A little tip when shaking with liquid honey. Don’t just add to the shaker with ice or it will seize and not dissolve. Warm gently first and stir it in to the other ingredients until incorporated. Then add the ice to the tin. eu.itsundone.com by @perrigaux
Iced Cheong/Rooibos Spritz Korean Lemon & Ginger Cheong, Rooibos Tea, Cheong Lemon Slice, Soda Water, Ice #rooibos #tea #cheong #lemon #icedtea by @perrigaux
Korean Lemon Cheong Thinly sliced lemon, equal weight white sugar, a little honey and fresh ginger juice. Layer the ingredients up the jar. Only a little honey at each layer and 2 teaspoons of fresh ginger juice at each layer. Four to five layers. Leave to mature for 3-4 days in the fridge. Add a little of the liquid to ice cold sparkling water for a delicious spritz, add a slice of the lemon to any drink, use to make a delicious tea of your choice. It won’t last long ! #lemon #alcoholfree #korea #ginger #mocktail by @perrigaux

Inflection Canteloupe Melon Juice clarified with Goats Milk, Citric Acid, Elderflower Cordial, Sea Salt, Crispy Serrano Ham The clarification with this worked perfectly. The juice of course was originally a deep golden orange, but clarified to near perfection. The goats milk whey of course becomes part of the drink and gives it a luscious mouth feel. The crispy Serrano is an absolute must and a perfect pairing for melon. #alcoholfree #melon #serranoham #elderflower #cocktail by @perrigaux
Love Song Fermented Elderflower and Blueberry ‘Champagne’ or Sparkling Wine. Start to finish. One week ! The pollen in a fully open elderflower head has bags of wild yeast and is therefore very easy to ferment. Use 5 or 6 fully open elderflower heads, 80g of sugar and fruit of your choice plus four or five slices of lemon. Cover with water in a fermenting jar. I use a plastic bag weighted with more water to keep everything under the surface. Close the lid and ‘burp’ every day. Ferment for 3 full days then bottle. Keep for 4-7 days in the fridge before serving. Plus or minus 2% alcohol. #alcoholfree #soda #cocktail #mocktail #elderflower by @perrigaux

Mandelion Mandarin and Saffron 12 hour ‘tea’, Homemade Dandelion Golden Syrup, Lychee Ice This is one for summer and quite delicious and thirst quenching, ideal pre bbq. Peel two mandarin and slice the segments in half. Other orange citrus works just as well. Bloom a few strands of saffron with ice, ground in a mortar and add to a teapot with the mandarin segments and cover in water. Refrigerate for 12 hours or more. Add dandelion golden syrup or any other syrup to taste. Freeze lychee juice or the blitzed fruit and serve with two or three fronds of saffron. #mandarin #alcoholfree #dandelion #saffron #mocktail by @perrigaux
