LAST WEEKEND

Ohhh that was hard work and fun in equal measure. My dad’s mates from football had a retro themed bbq tasting menu. 11 courses for 27 people.
Popcorn (salted and maple & smoky bacon)
Bread and dripping
Soup and a triple layered cheese toastie bite
Lamb kebab
Happy meal including toy and a boozy drink
Mini Kiev and potato smiley with smoked ketchup
BLT lettuce cup with smoked pork belly
Brisket “findus” crispy pancake
“KFC” Korean fried chicken
Toast and marmalade (marmalade jelly and toast ice cream)
Sherry trifle jar.

The butcher near me is often hit and miss and if I’m doing a big chunk of steak like this I prefer to have a couple of days for it to rest in the fridge and a long time to slowly bring it up to temp. Nevertheless, at £20 for this chunk of meat who could turn it down? taken in Maidstone, Kent by @philipcreates

LIGHTING. CHARCOAL.

Lighting the coals doesn’t have to be hard work at all. Her we can see how in less than 10 minutes, and I’m including the time it took to get the charcoal and the bbq out, we are ready to get cooking. That’s got to be just as fast as gas hasn’t it?
It’s really important to use good quality charcoal here, I am using some made locally from coppiced woodland that has no additives at all. It make a huge difference. Even more importantly the Weber chimney makes all the difference, this is 5 years old now and still going strong too. DINNER.
.
Something about coming indoors to eat now it’s colder makes me more interested in playing up my food rather than letting everyone dig in.
.
My presentation isn’t the best but the food was delicious.
.
Here we have braised, pressed and roasted pork belly, pork and white wine sauce, celeriac puree, buttered greens, confit potato stacks and apple sauce.

I’ve been cooking a lot of lamb just recently so when it came to the family Easter Sunday we did Christmas dinner and there’s nothing better then cooking the turkey on a rotisserie on the @weberuk. Paired with a big slab of smoky bacon wrapped sage and onion sausage meat stuffing, goose fat roasties and plenty of trimmings the family were super happy.
