🪶 Pheasant season kicks off next week. Time to get back in the field! 🤠

Cold mornings, muddy boots, shotguns over the shoulder, and good dogs doing what they were bred to do.

There’s something about hunting that’s hard to put into words. The miles walked, the birds flushing, the adrenaline of a driven shoot, and the camaraderie that comes with a long day outdoors.

Hunting isn’t just a sport. It’s a way of life.

And the day doesn’t end when the guns are put away.

We bring home what we hunt, fire up the kitchen, pull a few corks, and gather around the table. Breaking bread, telling stories, giving each other hell about the shots we missed, and enjoying a meal we earned.

That’s the beauty of it. Knowing where your food comes from, respecting the land, and sharing it all with good people.

Good dogs. Straight shooting. Wild food. Fine wine.

Come experience a proper day in the field. From walked-up hunts to traditional driven pheasant shoots, followed by a well-earned feast.

🪶 Booking private hunts for the season. Send us a DM to claim your spot.

Our annual olive family harvest! 🫒 👨🏽‍🌾 👩‍🌾

It’s important for kids to understand where their food comes from—and just as important for us adults to understand where and how our food is sourced.

A little olive harvest today, olive oil tomorrow. Teaching them to appreciate the land, the work, and the process behind what ends up on our table. 🌿

The adventures brought us to Darwin Ranch, but some of my favorite moments happened back at the lodge.

Coming home after a long day in the mountains. Cold plunge, sauna, jacuzzi… then everyone slowly finding their way to the table.

The livestock raised right there on the ranch became dinner, paired with our Cervantes wines. Ranch to table, ranch wine to glass. 🍷

Then there was nowhere else to go, and that was the whole point.

No Wi-Fi. No distractions.

Just Negronis at sunset, cigars under the stars, great food, bottles being passed around the table, stories getting better as the night went on, and a lot of laughs.

Clients became friends. Friends became family.

That’s what Casa Cervantes is really about. Creating a reason to get away, slow down, share a table and actually spend time together.

Thank you Ollie, Kathy and the entire Darwin Ranch team for making us feel at home in such a special place.

Some places are meant to be explored from the saddle. 🐎

At Darwin Ranch, our days started by saddling up and heading deep into the Wyoming wilderness, riding mustangs through country that still feels truly wild.

No roads. No crowds. Just horses, mountains, rivers and millions of acres around us.

We rode for hours to places you’d never reach otherwise, stopped for long lunches in the middle of nowhere, and eventually made our way back to the Gros Ventre River to try our luck for cutthroat trout. 🎣

There’s something special about spending an entire day outside with nowhere else you need to be.

Ride. Fish. Eat. Laugh. Keep going.

This is exactly what we imagined Casa Cervantes could be, bringing friends together through wine, adventure and experiences you don’t easily forget.

We’ll be back at Darwin Ranch next year. If you want to join us, send me a DM. 🤠

Our first Casa Cervantes experience at Darwin Ranch. 🐎🏔️🍷

A few days completely off-grid, surrounded by millions of acres of wilderness. Riding mustangs into the mountains, fly fishing the Gros Ventre, long lunches in the middle of nowhere, ranch-to-table dinners paired with Cervantes wines, mezcal, Negronis, cigars, sunsets and more than a few laughs.

But the best part had nothing to do with where we went or what we did.

It was watching clients, friends and family become one big family. Out there, there are no frontiers, no races, no political agendas—just people helping each other, sharing a table, telling stories and actually connecting.

Sometimes you have to disconnect to remember how to connect.

Thank you Ollie, Kathy and the entire Darwin Ranch team for opening your home to us and reminding us to slow down and appreciate the simple things.

Casa Cervantes will return to Darwin Ranch next year. We’ll be keeping the group small, so if you’d like to join us for the next experience, send me a DM to reserve your spot.

Had the pleasure of cooking alongside Valentin @chefsale__ for two weeks at the ranch. 🤠🔥

We sourced our ingredients from local farmers and friends, cooked for family and friends, opened plenty of our family’s wines, and simply enjoyed being around the table breaking 🥖🍷🍤🥩🥬

There was something really special about slowing down, cooking outside with what was around us, and sharing it with people we love.

Even more rewarding was spending time with such a talented young chef—full of life, curiosity, and passion for his craft.

It makes me excited to see what the next generation of people in wine, food, and hospitality will bring to the table. The future is bright! 🙏🏻
