What a year. Meeting my heros, eating the food that inspires me, supporting friends, and cooking as much as I could, and getting new inspiration in my wife’s hometown.

2025 I cooked more brisket than ever, and was able to help feed my community.

You can’t make good barbecue unless you’ve had great barbecue. I’ve been fortune enough to have spent enough time in Austin to eat at some legendary institutions and meet some of the best at the craft of barbecue in the world. In order that that I went to them.

If you haven’t heard of @smoking.section.bbq yet, today is your lucky day because let me put you on. This little red trailer outside @greatlakesbeer is popping up Thursday through Sunday until November, serving up some seriously flavour-packed BBQ. 💨

I recently stopped by for their Burger Thursday and was greeted with one seriously THICC burger. The 8oz patty is treated like brisket, seasoned generously and smoked for 90 minutes before getting a sear on the flat top. The result? A massive, juicy burger with smoky, peppery flavour in every bite. And if you’re a brisket fan, this is one burger you’re definitely going to want to try. Trust me! 🙌

That’s a wrap on August!

Made some new festival friends, got a giant new sausage, hundreds of burgers and sandwiches, platters for days, being highlighted by @dishedtoronto / BlogTo and making something special happen @greatlakesbeer

Last night felt special.

Beautiful weekend, the busiest yet!

Friday nights side ribs. No shortcuts. No gimmicks. Some of these bones were over 1lb on their own!

Smoked all day and sold out by 7:45.
