Chocolate e vinho soa romântico.

Mas a maioria das harmonizações falha por uma razão simples.

O chocolate é mais doce do que o vinho.

Quando isso acontece, o vinho pode parecer amargo, leve ou agressivo. Não porque seja mau. Mas porque a estrutura está desequilibrada.

O álcool, o açúcar, a acidez e os taninos interagem com a doçura. E o chocolate altera esse equilíbrio de forma significativa.

O chocolate de leite precisa de fruta e suavidade.
O chocolate negro exige estrutura e profundidade.
