🌽✨ Ever heard of nixtamalization?
It's an ancient Mesoamerican process that transforms dried corn into rich, aromatic masa — the heart of real Mexican tortillas. I recently had the opportunity to document this incredible tradition in action through a video collaboration with Luna Mexican Restaurant and Maiiz Tortillería.

Filming this was a beautiful reminder that behind every great dish, there’s history, technique, and passion. Chef Israel’s process — from boiling and soaking corn with calcium, to grinding fresh masa — is both technical and deeply rooted in culture.

What makes this special? It’s all about Nixtamalización — the traditional (and powerful) way of preparing corn — bringing deep flavour, nutrition, and cultural roots to the table 🌽🔥
