“act as if what you do makes a difference. it does.”

taped above the pass at resident taqueria is this little reminder. and honestly, i can’t think of a better way to describe what they’ve built.

because what they do goes beyond making incredible food. it’s the care in the smallest details, the pride in the craft, the way they treat people, and the community they’ve built around a shared table. all those seemingly little things add up to something that matters.

resident is hands down my favorite place to eat. and one of my favorite places to shoot.

the people, the energy, the rhythm of the kitchen, and all those little in-between moments that keep me coming back with an appetite and with a camera. there’s something special about watching people who genuinely love what they do.

to @andrewsavoie25, @platedbyparker, and the entire crew, you’ve created something really special. and i’ve loved getting to witness and document little pieces of it through my lens.

the @michelinguide bib gourmand recognition is so well deserved. but what i love most about resident can’t be measured in awards.

it’s the people. it’s always been the people.

grateful for you guys. congratulations, friends. keep making a difference.

Two remarkably talented and unique chefs teaming up to share their creations with an amazing group of people. I missed the first few courses of this cookout, but was still blown away by what seemed to be the perfect cheeseburger, followed by their take on a high brow culinary classic- “Dunkaroos”

My best friend died. One of my favorite memories was him telling me, “I hate mushrooms,” to which I replied, “will you try mine?” He ended up loving mushrooms later in his short life. Many of the dishes I’ve made include them, and were made for him. So tonight I made mushroom tagliolini with white truffle butter. And a load of Parmesan. Something I know he would have greatly enjoyed, and something that makes me in this sad day, and lonely moment, still feel close and connected to him. It’s a really great dish, and I know he’d love it. This one is to you, I love you John, forever. by @platedbyparker

Braised beef ribs glazed with their braising liquid, and crumbled in Szechuan peppercorn, over a chilled noodles salad. Inspired by a cold soba situation I had and always loved. The heat and warmth of the beef with their braising liquid chilled and dressed noodles was exceptional. by @platedbyparker

Denver steak, homemade Calabrian chili mayo, charred then dressed zucchini for a hang with the boys for game night. Little late post but always super fun to catch up. by @platedbyparker

Picanha, roasted cabbage with fermented chili dressing and almonds, I promise that’s salsa roja, but I had way more cilantro than tomato. Either way certified delicious. by @platedbyparker

I swear there are mashed potatoes under this, bangers and mash with onion gravy, and hot English mustard and I’m so in love with this it hits every single time. by @platedbyparker
