Moulard Duck • MáLà "Uppu Kari" • Sunchokes • White Asparagus • Black Figs • Fava

Cured and pan-seared Moulard Duck breast. An infusion of the classic Chettiar Uppu Kari with MáLà, the addictive Sichuan seasoning. Ensemble of white Asparagus, fava beans, crispy sunchokes, summer greens and flowers. Black Mission figs and pickled sunchokes.

A take on the ambiguity of certain colonial methods of cooking (such as the 'Roast') which have influenced the present day cuisine of southern India.

Spiced lavender honey lacquered Quail 'Roast'. 'Thokku' of fresh corn, black garlic, chilies, tamarind and cocoa. Ensemble of endives, pickled turnips, apricots and summer greens.

A take on a traditional rural classic from Tamil Nadu, 'Koozh' is the fermented porridge of millets and broken rice. A pure example of the crossroads in agriculture, tradition and cuisine.

A fermented porridge of finger millet and Jasmine rice, finished with vanilla infused crème fraîche. Butter-poached lobster. A 'Bisque' of roasted shells, chilies, aromats, coconut, tamarind and more crème fraîche.
