Last week I had the privilege to cook a meal for our wonderful guests at @capregionartscenter with a French motif. I built a menu around my honeymoon I spent galavanting around France with my lovely wife. Recreating dishes I ate from regions I was lucky enough to spend time in. The crisp salads with cheese and charcuterie on the streets of Paris, the pastis chicken from the beautiful and historic city of Marseille, and the hand made sabodet sausages from the culinary epicenter of Lyon. I have never worked harder in my entire career to bring a degree of authentic flavor and technique to a meal than I did for this one. It was worth every second spent preparing it. Incredible food, incredible wine, incredible people. I am always humbled by everyone coming to show their support and admiration for what I do. It truly means the world to me. I love you all and I love that I still get to do this for a living. You all RULE!

So about a week ago I curated a mushroom based dinner at @indianladderfarmsciderybrewery in collaboration with my friends at @collar_city_mushrooms and help from my old pal @ohcarp1000 . I was very much out of my element in this scenario. I wanted to make something that not only showcased my Polish/Slavic heritage but also taught me more about it.

The beet salad with sorrel, hazelnut cheese, and pickled ramp encapsulated ingredients normally found in Polish cuisine.

The Łazunki (which I had never made prior to this dinner) which was a rich mix of Polish and Italian ingredients that was a fantastic vessel for the delectable mushrooms. The square pasta, vegan sour cream, oyster and lions mane mushrooms, fresh picked dill all paired well together. Though I must admit it would have been even better with my homemade bacon!

Finally, the chocolate mousse with shiitake and silken tofu was a smash hit! The raspberries and pineapple weed were freshly picked from the farm rounded everything out.

Touching on my heritage struck a note that day because my beloved grandfather, Stanley Hajdasz, had just passed away the afternoon before this amazing dinner. He taught me most of what I know about my heritage from the cuisine to the polka he would always listen to while he showered after a hard day's work at the farm. I miss him so damn much and he was one of the best damn role models I've ever had. Miss you, Papa. taken in Indian Ladder Farms by @prettypigprovisions

She and her band have been playing in our barn since 2023 when we started hosting our cozy harvest honky tonks 🤠🤠

As you can she she brings the upbeat, live, HOT music perfect for dancin ‘ of all kinds

Break out those boots and come boogie in a Sunday afternoon with us in the barn ! Cause who doesn’t love that dance floor ? And who doesn’t love a Sunday afternoon getdown🍻

SECOND VERSE SAME AS THE FIRST! September 27th at 5pm! We're having another back yard supper club! This time around we will have 16 seats!

Seats are $150 and will require a 50% non refundable deposit to claim. The ticket price includes, a family style meal, a to go box for leftovers, and all the wine, cider, beer, or NA drinks you can drink! DM to claim your spot!

The dinner will be held in my back yard to enjoy the brisk fall evening under the big cedar tree. Shout out to @connollyproductions for capturing some stunning still life photos our last dinner!

PLEASE READ CAPTION CAREFULLY!!!!!

Sunday August 23 at 6PM I'm hosting a dinner with only a dozen seats! It will be first come, first served. $125 per person with wine and beers included. There will be NA options available for those who are alcohol free. 50% non refundable deposit is necessary to hold your spot at the table. Can be transferred to another person if you cannot make it to the dinner.

Everything will be cooked over a live fire and I will not be able to make any substitutions. All food will be served family style in my own back yard under the big cedar tree surrounded by my little garden beds. There may be some slight variations on the final menu depending on what is seasonally available at the time of the dinner.

Yesterday, I had the privilege to help my friends at @laughing.earth process their chickens that they have raised for the last 8 weeks. That was the first time in nearly two decades that I spent the day helping out on a farm. Nourishing yourself with an animal that was alive only yesterday and you had a hand in processing is quite the humbling experience to say the least. If you have the chance to help out in an endeavor like this, I highly recommend it. It will make you grow not only as a chef, but as a human as well. And if you find yourself at @troymarket go and buy some of their amazingly raised products.

I was inspired to create a similar dish to one that I was lucky enough to have at @brushlandeating back in March for my birthday. It was absolutely fantastic! It is chicken legs with red lentils, celery, carrots, dates, kale from the garden, oyster mushrooms that I foraged, white wine and chicken stock. If you get the opportunity run, don't walk to Brushland Eating House. They have a little slice of heaven tucked away in the northern Catskills.

@prettypigprovisions is taking over Saturday Cookouts and we are soooo excited for it. The K Dog is a MUST TRY if you love kimchi and spice. Dale will be serving up from the Tasting Room Biergarten starting noon until he sells out. 🐖 by @prettypigprovisions
