Foraging is one of our first languages.

Long before supermarkets, schedules and screens, we understood the seasons. We knew where food grew, which plants healed, and how to live in relationship with the land rather than simply taking from it.

There is something profoundly grounding about gathering what nature offers with care and gratitude. It reminds us that nourishment is not just about what we eat, but how we connect. To the earth beneath our feet. To the changing seasons. To the wisdom that has always existed around us.

At Bowland House, we believe that good health is a birthright, not a privilege. The apothecary, the walled garden, the wild hedgerows and the surrounding landscape will all play a role in helping us rediscover that connection.

Foraging is not about taking. It is about reciprocity. About respecting the land, understanding its rhythms and giving thanks for what it provides.

Perhaps true luxury is not found in having more, but in remembering what we already have.

The aperitivo bite that disappears first, every time. 🫒
Savoury bignè: crisp choux shells, whipped ricotta cream, capers, anchovies, and a final shower of @pure_oliiv olive oil, parmigiano and @calvisiuscaviar_official dried caviar.
Here’s what cooking school taught me about choux that no one tells you:
1. The egg count is a suggestion, not a rule. Some days the dough drinks all three, some days it doesn’t. Stop when it falls off the spoon in a slow, glossy ribbon — that’s the real test.
2. The pan-side moment matters more than the recipe. You’re not just mixing the flour in, you’re drying the dough. That faint film on the bottom of the pan is what makes them puff hollow.
3. And the one everyone breaks: don’t open the oven. Not even a peek. Steam is what inflates them, release it early and they collapse into sad little pancakes.
Once you know these three things, choux stops being intimidating and starts being a party trick. Makes about 30 bignè.
